1/4 c : Dry Spanish Sherry
3 : Garlic; Minced

2 c : Raw White Rice
Salt and Pepper; to Taste

Welcome to my kitchen! In this video, I'll show you how to make delicious Puerto Rican empanadillas using store-bought Goya discs.
For the filling, I'll be making a flavorful picadillo with ground turkey, sofrito, tomato sauce, olives, and cheese. However, feel free to use any filling you prefer - from chicken to vegetables!
I'll then demonstrate how to assemble the empanadillas using the pre-made Goya discs, including how to add the filling and fold the discs into that classic empanadilla shape.
Finally, we'll fry the empanadillas until they're crispy and golden brown. I'll also provide you with some tips and tricks to ensure your empanadillas turn out perfect every time.
Whether you're a seasoned cook or a beginner, you'll love making these flavorful and convenient Puerto Rican empanadillas. So, let's get started - ¡buen provecho!

Picadillo Ingredients:
• 1lb ground meat - any
• 1/2 chopped onion
• 1 small potato, peeled and diced
• Pimientos/olives
• 1/2 tsp all-purpose seasoning
• 1/2 tsp creole seasoning (sub for extra all-purpose seasoning)
• black pepper to taste
• oregano to taste
• 1/2 tsp white or packed brown sugar
• 3-4 tbsps sofrito
• 2 - 3 tbsps tomato sauce
• 1 packet Sazón con culantro y achiote

Stuffed POBLANO PEPPERS W/ GROUND BEEF...full of delicious favors...hard to resist!! Recipe below...
Stuffed POBLANO PEPPERS W/ GROUND BEEF
Preheat oven to 350 degrees F.
Lightly grease 13 by 9 baking dish. Set aside.
2 medium size POBLANO PEPPERS, slice in half lengthwise and seeds remove.
1/2 LB Ground Beef (ground sirloin used for this recipe)
1/2-1 teaspoon kosher salt, or regular
1/4-1/2 teaspoon freshly grated black pepper, or regular
1/4 cup onion, chopped
2 garlic cloves, minced
1/4 cup Panko bread crumbs or substitute with cooked rice
1/2 cup mild or hot salsa
1/2 teaspoon dried oregano
1 (8-ounce) package or blocked Colby Jack Cheese, shredded, add more if you wish
1. In a 10-inch skillet, over medium-heat, add meat, salt, and pepper. Cook while crumbling meat until no longer pink, about 8-10 minutes. Add onions and garlic. Cook for an additional 2 minutes. Remove from heat.
2. Stir in Panko bread crumbles (or rice), salsa, and oregano until well blended. Add 1/2 cup cheese. Stir until cheese has melted.
3. Using a spoon add meat filling evenly into each prepared Poblano half. Place into prepared baking dish. Add 2-3 tablespoons water around peppers making sure to avoid getting water inside the stuffed peppers
4. Add remaining cheese evenly on top of each stuffed pepper.
5. Cover and bake for 45-50 minutes or until peppers are bubbles and tender.
TIPS: Cover leftovers in an airtight container in the refrigerator up to 2 days. Heat in microwave, covered, up to 1-1/2 minute or longer, if desired.
