1.00 sm Avocado 1.00 Egg; slightly beaten 0.50 c Sour milk 1.00 c Unbleached white flour 1.00 c Whole-wheat flour 0.50 ts Baking soda 0.50 ts Baking powder Dash of salt 0.75 c Sugar (scant) 1.00 c Pecans; chopped-ONLY pecans Mix all ingredients except first 3 in large bowl. Mash avocado; add egg and sour milk. If flour mixture is very dry, add another egg. Combine avocado mixture with flour mixture; stir only to moisten all flour. Pour into loaf pan or 4 mini loaf pans. Egg Entree For Lunch
Very easy recipe for lunch or dinner.
Ingredients: One medium onion 5-6 pieces of crisp bacon 2 handfuls of baby spinach 5 eggs, beaten One medium tomato sliced in little cubes for garnish 1 tablespoon oil 1 teaspoon butter This meal was served with sliced avocado, French bread toast along with Welch's strawberry spread and ice tea.
This is one of my favorite meals because it's easy to prepare and taste delicious.

Here's the recipe: The baking pan used is 11x 16 jelly roll pan. 1 1/2 cups water 1/2 cup scalded whole milk 2 tablespoons sugar 2 teaspoons yeast 2 tablespoons oil 3 3/4 cups bread flour more or less to make a thin dough 1 1/2 teaspoons salt
Bake for 25-30 minutes at 375 degrees Brush tops with melted butter then cool on wire rack.

Cut your avocado in half, take out the middle seed, spoon your avocado from the shell. place your avocado in a bowl.
** it may be easier to cut your avocado up in squares while it's still in the shell
Add diced tomatoes, Diced onions, A Sprinkle of salad seasoning, Some garlic powder, A Sprinkle of pepper, Himalayan salt or a salt of your choice Diced Mango (optional)
