How To make Philadelphia Pepper Pot Ii
2 lb Tripe
4 Calve's feet
Water 1/2 ts Sweet marjoram
1/2 ts Sweet basil
1/2 ts Thyme
2 Onions
2 Potatoes
Salt Butter 1 Red pepper
Put two pounds of tripe and four calve's feet into the soup-pot and cover them with cold water; add a red pepper, and boil closely until the calve's feet are boiled very tender; take out the meat, skim the liquid, stir it, cut the tripe into small pieces, and put it back into the liquid; if there is noe enough liquid, add boiling water; add half a teaspoon of sweet marjoram, sweet basil, and thyme, two sliced onoins, sliced potatoes, salt. When the vegetables have boiled until almost tender, add a piece of butter rolled in flour, drop in some egg balls, and boil fifteen minutes more. Take up and serve hot.

2 cups chopped Callaloo and Kale
1/2 doz Okras
Dough for Dumplings
1 Scotch Bonnet Pepper
Salt and Pepper to taste
1 pack Coconut Milk
1 pack Noodle Soup of your choice
6 Pimento Seeds
1 sprig Thyme
2 tablespoon Coconut Oil

My dear friend and fellow Guyanese brother Bombay Lemonade and I present to you our rendition of Guyana's National Dish - Pepperpot. We were both raised with the scents and aromatics of this spectacular dish in our households, especially around Christmas time.
On my most recent journey to the Motherland, I visited the Ministry of Amerindian Affairs in Georgetown, it was there that I sourced my beloved cassareep for this recipe. We hope you enjoy this as much as we enjoy having the opportunity to share this dish with you!
Ingredients:
3 lbs beef chuck cubed
2 lb oxtail
1 tbsp vegetable oil
5 cloves garlic
1 cup onion, diced
2 cinnamon sticks
5 sprigs of thyme
1 tbsp brown sugar
1 tbsp cloves
2 x 3” peels of orange
3 tsp kosher salt
4 cups hot water
1/2 cup cassareep
3-5 Wiri Wiri peppers

Jamaican Pepper Pot Soup Recipe
Ingredients:
One bundle Calaloo
Scallions
Thyme
Oregano
Sage
Onion
Okra
Yellow yam
corn on the Cobb
Sweet potatoes
Green bananas
One can coconut milk
Nutritional yeast
Pepper (scotch bonnet, bird pepper0
Black pepper
Herbs de Province
All Seasoning Salt
All purpose seasoning
Salt to taste
Beef bones/chicken bones (chicken back) chicken legs or whole chicken
Method:
- Cook proteins and soup bones for at lease 45 minutes or until fully cooked
- Add yellow yam, sweet potatoes & green bananas, cook halfway then -
- Add one can coconut milk - bring to a boil
- Add spinners aka dumplings - allow to cook for a few minutes
- Add powdered seasoning and fresh seasoning as well as Calaloo.
- Cook Calaloo for 5 minutes then remove, allow to cool.
- Blend Calaloo, scallion, thyme, oregano, sage, garlic and nutritional yeast.
- Pour mixture back into pot, cook for another 5 minutes then add okra last.
At this point soup should be done on 3 to 5 minutes

Pepper pot soup was iconic in the colonial Philadelphia. It gained popularity in the colonial era and was sold exclusively by free black women of color. Let's explore how to make this delicious soup. My recipe is based off of research and my own personal taste.
2 1/2 lb pork neck bones ( beef bone ok too)
2 1b beef shank
1 lb honeycomb tripe ( rinse well, soak for 30 min then boil for 15 min and drain to clean)
Seasoning blend: 2 tsp beef bouillon, 1 tsp pepper, 1 tsp complete seasoning, 1/2 tsp creole seasoning, 1/2 tsp garlic powder, 1/2 tsp thyme
salt to taste
2 leek ( clean well as they tend to trap dirt)
1/2 onion
1/2 bell pepper
3 cloves garlic
3 allspice berries, 2 cloves, bayleaf
2 carrots
1 potato
collard greens
corn
scotch bonnet, cayenne pepper , or red pepper flakes to desired heat
3 green onions
water or beef broth to desired thickness
fresh herbs- rosemary, thyme, parsley (whatever you have should work)
