How To make Pfeffernusse(Peppernuts)
20 oz Dark Karo Corn Syrup
2 c White granulated sugar
1 c Butter plus 1 cup lard
OR:
2 c Crisco
1 t Salt
4 Eggs, beaten slightly
1 c Buttermilk
3 ts Baking soda
1 t Anise oil
1 t Cinnamon
1/2 ts Cloves
1/3 ts Ginger
2 c Finely chopped nuts
10 c Flour
Boil the Karo syrup for 2 minutes, and then add the sugar, butter, and salt. Stir until sugar and shortening are melted, then cool. When cool, add remaining ingredients (except flour). Add flour in increments until dough is very stiff. Chill thoroughly (can even be frozen). Roll chilled dough into rolls about the width of a finger. Cut with a knife into small 'pillows'. Pat pillows flat and bake in moderate oven (350 degrees? ~- time is unknown so I'd have to guess maybe 8-10 minutes. This is an old recipe of my grandmothers and it doesn't^? specify).

Peppernuts are a cookie you either know about and love or you've never heard of. For me, these are full of family tradition and nostalgia! They're flavored with anise oil, but don’t roll your eyes and think black licorice. Instead, think of them as a perfect thing to make as a family and enjoy with coffee!

INGREDIENTS
- 1 cup lard, (or vegetable shortening)
- 1 cup molasses
- 2 cups sugar
- 1 egg
- 1/4 tsp real anise oil
- 1/2 cup sour milk, (1 tbsp vinegar with 1/2 cup milk)
- 2 tsp baking soda
- 6 cups flour
INSTRUCTIONS
In the bowl of a stand mixer, mix the lard and molasses, 30 seconds. Add the sugar, egg, anise oil, sour milk, and mix well, 1 minute. Add baking soda and flour and mix until only a few streaks of flour remain, 1 minute.
Shape into cylindrical rolls approximately 1/2-inch to 3/4-inch in diameter. Chill overnight and cut into 1/4-inch pieces.
Preheat oven to 350°F. Place on a parchment-lined baking sheet and bake for 10-12 minutes. Remove from oven and let cool on pan for 5 minutes. Using a spatula, scrape the peppernuts into an airtight container. Store for up to three months in the freezer.

Ingredients
1⁄2 cup honey
1⁄3 cup unsulfured molasses
2 tbsp. butter
2 eggs, at room temperature
2 cups whole wheat pastry flour
1⁄2 cup candied lemon peel, finely chopped
1⁄3 cup almonds, finely ground
3⁄4 tsp. freshly ground cinnamon
3⁄4 tsp. freshly ground black pepper
3⁄4 tsp. freshly ground cloves
3⁄4 tsp. freshly ground cardamom
1⁄2 tsp. baking powder
2 tbsp. vegetable oil
1 cup confectioners' sugar, sifted
1-2 tbsp. light rum

If you are looking for a new Christmas cookie recipe or you are going to bake Christmas cookies for the first time, this is perfect recipe to start with. Dough is easy to handle and there is nothing what can go wrong.
Home-made pfeffernusse are soft and they melt in your mouth.
Dry ingredients
270g all purpose flour
½ teaspoon baking soda
¼ teaspoon salt
4 teaspoons gingerbread spices (2 Tb Ground Ginger,2 Tb Ground Cinnamon, 1 Tb Ground Cloves
1/2 tsp Ground Nutmeg)
¼ teaspoon ground white pepper
30g almond flour
Wet ingredients
110g brown sugar
115g honey
75g unsalted butter
3 tablespoons milk
1 large egg – room temperature
Ingredients for glaze
260g powdered sugar
4 tablespoons hot water

Ingredients
makes: +30
150 gr butter, softened
125 gr dark brown sugar
pinch salt
250 gr self rising flour
4 tbsp milk
10 gr speculoos spices
(or make your own speculoos spices you need:)
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp anise seed
1 /2 tsp ground cloves
1/4 tsp white pepper
1/4 tsp coriander
Instructions
1. Preheat your oven to 160c/320f and line a baking tray with parchment paper.
2. Put all ingredients in a medium bowl and knead until a ball of dough begins to form.
3. Roll dough into 4 long strips, cut each strip into small pieces.
4. Place the pieces onto lined tray and press lightly with your thumb.
5. Place in oven and bake for about 15 minutes.
