How To make Pesto Pasta
PASTA:
3 c Unbleached all-purpose flour
2 lg Eggs lightly beaten with
1/4 c Pesto Sauce
:
PESTO SAUCE 2 md Garlic cloves
2 c Fresh basil leaves :
packed
1/2 c Extra-virgin olive oil
1/2 c Feta cheese crumbled
(about 3 oz.) 1/4 c Walnuts :
chopped
For The Pasta: Following the instructions given in your owner's manual, prepare and set up the pasta machine with an extruder die to make the disired shape of pasta. All ingredients must be at room temperature. Place the liquid ingredients in a glass measuring cup. If less than 3/4 cup, add some water to make up the balance. Add the dry ingredients to the pasta machine mixing bowl. Switch the pasta machine on. Slowly pour the liquid ingredients through the feed tube. Mix for approximately 3 minutes, or until the dough appears to be coming together in soft pea-sized crumbs. Following the instructions given in your owner's manual, begin to extrude the dough. Cut off the first 2 to 3 inches extruded and discard. As the pasta
begins to come out, gently move it away from the machine. Cut with a sharp paring knife or scissors at desired lengths. Place extruded pasta on a wire rack or on a clean kitchen cloth. Let sit for at least 30 minutes before cooking, or store for later use. For The Pesto Sauce: Put the garlic, basil leaves, and olive oil in a blender jar or food processor bowl. Process until smooth. Add the feta cheese and walnuts and process just until the cheese is blended into the mixture. The sauce should have the same consistency as heavy cream. If too thick, add additional oil or water, a tablespoon at a time. The recipe for the Pesto Sauce makes enough for 4 servings when used as a pasta sauce, which by the way, it pretty darn good! Recipe:
Serves 4
Ingredients:
1 tablespoon canola oil
2 chicken breasts, sliced into ½-inch strips
2 tablespoons garlic, chopped
½ tablespoon kosher salt
½ tablespoon freshly ground black pepper
¾ cup heavy cream
½ grated parmesan cheese
¼ cup pesto
3 cups penne pasta, cooked and drained
¾ cup cherry tomatoes, halved
Parmesan cheese to garnish
Chopped basil to garnish
Preparation:
Heat the oil in a pan over high heat. Combine the chicken, garlic, salt, and pepper, cooking until chicken is browned. Mix in the heavy cream, parmesan, and pesto, stirring until evenly combined. Bring to a boil and cook until the sauce has reduced, about 5-7 minutes. Toss in the pasta and cherry tomatoes, stirring until evenly coated. Remove from heat. To serve, sprinkle parmesan cheese and basil on top!

Full written recipe for Pesto Pasta

Serves: 3-4 people
Ingredients:
Pesto
OLIVE OIL | ऑलिव ऑयल 2-3 TBSP
GARLIC | लेहसुन 1 CLOVE
WALNUT | अखरोट 4-5 NOS.
SALT | नमक A PINCH
BASIL LEAVES | बेसिल के पत्ते 100 GRAMS
PARMESAN CHEESE | पारमेसान चीज़ 50 GRAMS (GRATED)
OLIVE OIL | ऑलिव ऑयल 3 TBSP
Boiling pasta
SALT | नमक A LARGE PINCH
PASTA | पास्ता 250 GRAMS (PENNE)
Final Assembly
PASTA | पास्ता AS REQUIRED (HOT)
PARMESAN CHEESE | पारमेसान चीज़ AS REQUIRED
PESTO | पेस्तो AS REQUIRED
PASTA WATER | पास्ता वाला पानी 1-2 TBSP
SALT | नमक IF REQUIRED
Method:
To make pesto add olive oil in a chopper along with garlic, walnut & a pinch of salt & grind it together to emulsify the oil nicely.
Further add the basil leaves, parmesan cheese & olive oil, grind it again until a semi-coarse paste is formed, make sure you scrape the sides of the chopper.
Your pesto is ready.
To perfectly boil the pasta bring water to a roaring boil in a stock pot, then add salt & pasta of your choice & let the pasta for boil 8 minutes.
Once boiled strain the pasta using a large spider, make sure you reserve the pasta water.
In a bowl add boiled pasta as required, parmesan cheese & pesto as per your taste preference & mix well.
Further add a couple of tablespoons of the pasta water to bring the pasta to the right consistency, make sure that the pasta water is hot.
Once mixed taste & adjust the seasoning if required.
Your quick & easy pesto pasta is ready.

You Can’t Go Wrong With Freshly Made Basil Pesto Pasta
Ingredients -
1-2 - Garlic Cloves (Use 1 For Mild Flavour)
15g (0.5oz) - Parmesan Cheese, Freshly Grated
15g (0.5oz) - Pinenuts, Toasted
1 - Large Bunch Of Fresh Basil, Picked
3 Tbsp (60ml) - Extra Virgin Olive Oil
1/2 - Lemon, Juiced
Seasoning To Taste
Extra Virgin Olive Oil To Your Liking
300g (10.5oz) - Spaghetti Or Pasta Of Your Choice
Parmesan Cheese To Serve
Fresh Basil To Serve
Cracked Black Pepper To Serve
Method -
1. Place a large pot of water over high heat and bring it to a boil. Once boiling, generously season with salt and cook the pasta for 1 minute less than the packet instructions. Remove and drain.
2. Add the pine nuts and toast in a pan over medium-high heat for 2-3 minutes or until golden and fragrant. Remove and let cool.
3. In the meantime, place all ingredients into a blender or food processor and blitz until it forms a coarse paste and runny consistency. Check to season and adjust oil amounts if need be. Remove and set aside.
4. Place the drained pasta into a mixing bowl, add the pesto, and combine. Serve in bowls, and garnish with fresh parmesan cheese, fresh basil leaves and cracked black pepper. Dig in.

Serves 4
400 grams pasta, your choice
2 tbsp butter
1 shallot, minced
2 garlic cloves, minced
1-2 tsp red pepper flakes
Pepper
1/4 cup pesto
1/2 cup heavy cream
1 cup reserved pasta water
Grated parmigiano reggiano to serve
INSTRUCTIONS
Bring 4 qts of water to boil & add salt. Once boiling, add your pasta of choice and cook until Al dente (follow box directions if unsure). Drain and set aside about a cup of pasta water.
Heat pot to medium heat and add butter. Once butter is melted add shallots. Stir and cook until shallots are slightly translucent. Add garlic and cook until fragrant, about 30 seconds-1 minute.
Season with red pepper flakes and freshly ground pepper.
Add pesto, stir, and add heavy cream. Reduce heat to medium low and let the sauce thicken until it coats the back of the spoon.
Add pasta and stir. If the sauce is too thick, slowly add the reserved pasta water, a small splash at a time (think like 1/8 of a cup), until it reaches desired consistency.
Turn off heat and top with freshly grated parm cheese! Enjoy ????
