PA DUTCH CORNMEAL MUSH -- CAST IRON WEDNESDAY
This humble, simple dish hails back to colonial days but has kept families going through hard times for many years, such as the Depression. An oldie, but a goodie! I love it with maple syrup, but brown sugar and cinnamon, sausage gravy or brown gravy or bacon gravy are popular, also.
Corn Meal Mush for Frying --To make one loaf for frying
3 C corn meal
3 qt water
1/2 C flour
Seasoning as desired
Mix the corn meal, flour and 1 qt water together to make a slurry/batter.
Add to the other 2 qts at a boil.
Stir in well and bring all to a boil, and then drop to a simmer for a minimum of 1 hr, but longer is better to ensure it's tender.
After cooked and thickened, pour into a loaf pan and chill a couple of hours.
Take out of loaf pan and slice.
Fry up in hot pan until crispy.
Serve with maple syrup, gravy, etc.
If you just want it as porridge, don't add the flour.

How to Make Jalapeno Corn Fritters and Funnel Cakes 7-4-20 Lisa's Recipe of the Day
Lisa and her sister (Julia Mitas) show how to entertain and make your kitchen the place to be. Step by step on how to make Jalapeno Corn Fritters and Funnel Cakes.
Jalapeno Corn Fritters with Sauce
• 3 C. Fresh or Frozen Corn
• 2/3 C. Cornmeal
• 2/3 C. Flour
• 1 tsp. Baking Powder
• ¼ C. Cheddar Cheese
• 2 oz Cream cheese
• 3 Green Onions Chopped
• 3 Tbs Red pepper Chopped if desired
• 3 Slices Bacon Cooked and Chopped
• 2 Large Eggs
• 1/3 C milk or unsweetened nut milk
• Juice of 1 lime and ½ tsp lime zest
• 2 Jalapenos seeded and chopped
• Sea Salt
• Freshly ground pepper
• ½ Tsp. chili powder
• 3 Tsp to 1 C oil to fry in pan depending if you want more like a patty or a ball shape
1) In medium bowl mix Corn, cornmeal, flour, baking powder, cheddar, cream cheese, green onions, red pepper, bacon, eggs, milk, lime juice, lime zest and jalapenos. Combine and season with salt and pepper.
2) Heat oil in large skillet over medium heat. Scoop mixture and fry until golden brown about 3-4 minutes per side till golden brown.
3) Dip in Sauce and Enjoy!
Zippy Dipping Sauce with a kick for Corn Fritters
• 2 Tbs Extra Virgin Olive Oil
• 2 Tbs. Franks Hot Sauce
• 2 Tbs. Unseasoned Rice Vinegar
• 2 Tbs. Honey
• Sprinkle of Salt
Combine for dipping the Corn fritters. Yum!
Homemade Funnel Cake
Ingredients
2 C. All-purpose flour (spooned and leveled)
2 Tsp Baking Powder
1 ½ Tsp. Ground cinnamon
½ Tsp Nutmeg
½ Tsp, Salt
1 ½ C. Milk plus more if needed
1/3 C. Granulated Sugar
2 Large Eggs
2 Tsp Vanilla Extract
Oil for frying – canola or vegetable
Powder sugar for Garnish
Place skillet over medium heat and fill 1” w/ Oil. Heat to 350 degrees while preparing other ingredients.
In Bowl whisk dry ingredients – flour, baking powder, cinnamon, salt. Set aside.
In Bowl whisk milk, sugar, eggs, vanilla.
Once oil has reached 350 degrees pour the funnel cake batter in a funnel, using your finger to close off the end and when ready pour the batter into the oil in a circular motion overlapping itself. Cook about 1-2 minutes till golden and flip for another 1-2 minutes until golden and cooked through.
Remove from oil and using a fine sieve sprinkle with powdered sugar or other favorite toppings.

Green Onion and Corn Fritters
1 cup rice flour
1 large egg white
¾ cup water
1 tbsp fresh cilantro
Pinch of curry powder
1 ½ cup fresh corn kernels, cut and scraped from the cob
3 large green onions, chopped
Vegetable oil, for frying
Mix ingredients together. Heat about ¼-inch of vegetable oil in large skillet over medium heat until hot. Scoop up batter in ¼- cup measures and add to the oil.
