How To make Peg's Pimiento Pigs
1 pk Pork sausage links(12oz)
1 cn Pimientos(7oz)
3 T Butter or margarine
2 T Flour
1 c Milk
1/2 t Salt
1/4 t Nutmeg,ground
American cheese,shredded Parsley sprigs(opt) 1. Brown sausage links in a skillet.
2. Wrap each browned link in a strip of pimiento; arrange in a buttered
shallow baking dish in a single layer. 3. Melt butter in a saucepan; stir in flour to blend.
4. Add milk, stirring constantly; cook until slightly thickened and smooth.
5. Add salt, nutmeg and cheese.
6. Pour sauce over sausage; bake in preheated 350'F. oven 15 minutes.
7. Garnish with sprigs of parsley if desired.

Peas: Cooked peas for 1hr 25mins
490g Red Kidney Peas/Beans
4 Cloves/Pegs of Garlic
8 Pimento Seeds
3tsps or less of Ground Black Pepper
3tsps of Salt
Thyme (Not too much probably 4 springs)
Oscallion/Spring Onion
1 litre of Cold Water to start (Add another 3 litres gradually a litre at a time)
Meat (Beef): Feel free to use whatever meat you want.
The beef cooked for 30mins before it was added to the peas.
800g Diced Beef
1 onion
1 tomato
Scotch Bonnet Pepper to taste
4 Garlic Cloves/Pegs
A little Salt
A little Ground Black Pepper
3tbsps of Oil (Sunflower)
1tsp All Purpose Seasoning
1tsp Jerk Seasoning
1/2tsp Paprika
1tsp Pickapeppa Sauce
2tsp Browning

300g Plain Flour
1tsp Salt
200ml Room Temperature Water

How I Cook Pigs Feet Juicy Tender Flavorful Pig’s Feet Recipe.
Three pounds of big feet
Half tablespoon of browning
Half tablespoon of Mrs. Dash
Halt tablespoon of all purpose
Lots of garlic
Tip of salt Rub it in for a fu minutes,
cover it up for 2-3 hours.
When it cook add the the rest of season as it demonstrated in the video.

Pigeon Peas with Smoke bones and Pigtails????(Recipe in description box)
Ingredients:
1 Onion
2Tomatoes
3 pimento peppers
3 pegs of garlic
pigtail ( boiled in water to reduce excess salt ( I boiled mine twice to remove )and smoke bones boiled for about 5 mins)
1 tsp of geera
1.5 tsp curry powder
all purpose seasoning
dried thyme
Mrs dash lemon pepper and Mrs Dash onion and garlic seasoning
2 tins of Green Pigeon Peas drained and rinsed
1.5 cups of coconut milk (fresh)
1tbsp tomato paste
1tbsp sugar
salt to taste
Saute Onions, garlic, pimento peppers and tomatoes with 1tbsp of oil, after 3 mins add the curry, geera and tomato paste and stir. Ensure to Cook the curry very well and pour 1/2 cup of water into the pot and stir. Place the meat in and stir again after a few mins add the fresh coconut milk or powdered coconut milk and allow to come to a boil. Add the peas and powdered seasoning but ensure to taste for salt level at this point. Do not add any salt as yet bcuz it can cause the peas to get hard .
Stir and cover the pot. Turn the flame to low and Allow the stock to reduce. Taste and add salt and sugar to balance out the flavours and that's a wrap.
I added a scotch bonnet pepper as well.

Ingredients and instruction
Soak 1 cup Red Kidney Beans/Peas overnight with 2 to 4 pegs garlic with enough water to cover peas. Pigs Tail, Fresh or salt beef as shown in video. half pound or more meat. Trim wash meat clean with vinegar. Cook peas, scald meat to extract salt in a separate pot as instructed in video. cook peas for half hour. add scalded meat to peas. season pot with seasoning salt, cayenne pepper, turmeric,escallion,thyme.
knead 2 cups flour with water and pinch of salt. prepare yam dasheen sweetpotato, eddoes, green banana. 15 minutes later add ground provisions and dumplings.cook and 15 mins. later add more thyme, green onion or escallion, grace noodle and scotch bonnet pepper. cook 15 to 25 minutes. Enjoy.
