How To make Peg's Many Bean Soup
1 lb Mixed Beans, dried
1 Chopped onion
2 Chopped green peppers
3 Grated carrots
1 sm Bunch Celery, finely diced
1 lb Diced pork (chop suey pork)
1 lb Jimmy Dean Sausage (hot)
1 Grated potato
1 tb Sweet basil, dried
1 tb Ground sage
1 ts Salt
1 ts Pepper
1 Dash Red pepper
1 qt Chicken Stock, thereabouts
Presoak (8 hrs) or preboil (1 hr) beans, drain and rinse. Add chicken stock to soup pot and add beans. Turn heat on low. Add all ingredients just like that. Do not precook meat. The grated potato thickens the broth, another favorite thickener may be used, I prefer the potato. Simmer this soup for 2 hours before serving. I probably add more basil than listed, do that to taste. Go easy on the sage but it is quite important. You may add a tablespoon of sugar to perk this soup up a bit, I do not recall off hand if I did or not. Another ingredient to perk it up is a tablespoon of vinegar--don't overdo.

Black Eye Pea Soup
1lb bag of dry black eye peas
6 cups of water (hot)
4 bay leaves
4 fresh sage leaves (fresh) or ¼ tsp. dried
3 stems of fresh thyme or ¼ tsp. of dried
1 tsp. of adobo seasoning
1 pack of chicken bouillon cube (Goya brand)
1 tsp. of garlic powder
1 tsp. of onion powder
½ tsp. of cumin
1 medium size yellow onion (diced)
½ shallots (diced)
½ green peppers (diced)
1 ½ tsp of cornstarch
1 piece of smoked turkey wing
2 tbsp. of olive oil
Chopped cilantro
Soak beans overnight in water. Make sure the water covers the beans. The next day spin your hands around in the beans and water until you remove most of the shells that will float on top of the water.
In a large pot, add olive oil....once hot add the onions, shallots, garlic and green peppers- cook until onions are translucent. Pour in water; add sage, thyme, bay leaves, bouillon, garlic powder, onion powder and cumin and smoked turkey wing (only need a piece)...mix together. Add beans and let cook for 90 minutes to 120 minutes. Taste beans for tenderness.
Add cornstarch to bowl, take the juice from beans and mix together. Cornstarch will be watery in the bowl, but will thicken once you pour it into the pot. Cook for an additional ten minutes.
Serv with rice and garnish with cilantro.
