How To make Pear Breakfast Cake
1 lg Ripe but firm pear, about 9
-ounces Freshly ground black pepper -(optional) 2 lg Eggs
3/4 c Sugar
1/2 ts Vanilla
2/3 c Brown rice flour
1/3 c Cornstarch
1/2 ts Baking powder
1 tb Vegetable oil
Powdered sugar Preheat oven to 350F. Grease a 10 x 8 x 2-inch ceramic baking dish with butter. Peel, core and dice the pear. Spread in baking dish and top with a light grinding of black pepper, if desired. Beat eggs and sugar until pale in color and very thick. Add vanilla. Combine rice flour, cornstarch and baking powder. Sift over egg mixture and fold in. Drizzle oil around edge of bowl and fold in. Spread batter over diced pear. Bake for 35 minutes. A pale gold, crackly "sugar bloom" like a very thin layer of pastry will form on top of the cake. Dust with powdered sugar before serving from the dish, warm or cold. Serves 8. PER SERVING: 790 calories, 3 g protein, 39 g carbohydrate, 3 g fat (1 g saturated), 53 mg cholesterol, 38 mg sodium, 1 g fiber. Ingredients for making harvest pear crisp:
6 cups bosc pears, cored and sliced
1 tablespoon fresh lemon juice
1/3 cup sugar
1 tablespoon cornstarch
1 1/2 teaspoons ground cinnamon
2/3 cup all-purpose flour
1/2 cup brown sugar
1/2 teaspoon salt
3 tablespoons cold butter
1 cup regular oats
1/2 cup sliced almonds (optional)
Instructions for making classic pear crisp:
- First in a large bowl add your pears
- Then add your fresh lemon juice
- Mix the two together
- Now in a separate bowl add your sugar to the bowl
- Followed by your cornstarch
- Then add your ground cinnamon
- Mix everything together
- Combine the contents of both bowls and mix
- In your baking dish pour in the pear mixture
- Now in a food processor add your flour
- And add the rest of your cinnamon
- Now add in your brown sugar and salt
- Now blend everything together
- You then want to add in your cold butter
- And blend everything together well
- Now add in your regular oats
- As well as your sliced almonds
- Give that a couple pules in the processor
- Now spread your oat mixture over the top of the pears
- Bake in the oven at 350F for 15 minutes
- Let cool and your harvest pear crisp is ready to serve

Would you like a sponge cake to accompany your cup of tea on these autumn afternoons? Well, here I have a proposal for a pear cake that is prepared in 5 minutes. At this time of year, pears are much more delicious so take advantage of them to prepare this delicious and tasty cake that melts in your mouth.
Let's go with the ingredients:
- 1 egg white / 1 blanc d'oeuf
- Ground oats x 4 tbsp/ Avoine moulue x 4 càs
- Roasted and ground hazelnut x 3 tbsp/ Noisette grillée et moulue x 3 càs

FRESH PEAR STREUSEL CAKE RECIPE
2 and 1/2 cups of All purpose flour
2/4 cup sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup coconut sugar
1 teaspoon salt
3/4 cup oil ( I used ghee )
1 beaten egg
1 cup buttermilk
( I used whole milk plus lemon juice )
1 teaspoon vanilla
1 teaspoon baking powder
1 teaspoon baking soda
2 and 1/2 cup of fresh ripe pears (cored, peeled and chopped)
Topping:
1 cup chopped choice of nuts ( I used pecans! )
1/2 teaspoon ground ginger
- Preheat oven to 350 Farenheit. Place parchment paper in the springform pan (10 inch). Set it aside.
- Mix flour, sugars, cinnamon, salt, nutmeg and oil in a large mixing bowl. Set aside 1 cup of the mixture for the topping.
- Stir in the remaining ingredients: milk, egg, vanilla, baking soda, baking powder and the chopped pears.
- Scrape the batter into the pan.
- In a medium bowl, mix the reserved crumbs and the chopped nuts. Sprinkle it over the top of the cake.
- Bake it for about an hour or until an inserted toothpick at the center comes out clean. Cool, remove sides of the springform pan.
- Enjoy your cake with a cup of tea!
