How To make Peanut Refrigerator Cake
1 lb Butter,soft
1/2 c Peanut butter
1 lb Confectioners' sugar
1 pk Social tea biscuits (11 oz)
1 c Coffee,cold,strong
1/4 c Cocoa
1/2 c Peanuts,salted,chopped
1. In a bowl cream butter until light and fluffy.
Gradually stir in peanut butter, then gradually beat in confectioners' sugar until mixture is soft and fluffy. 2. Dip biscuits quickly, one by one, into cold coffee
and place 16 of them, touching, on a foil-lined cookie sheet (4 biscuits lengthwise and 4 biscuits across). Spread biscuits with 1/4 of the peanut butter mixture, spreading mixture carefully into an even layer. Sift over 1/4 of the cocoa. Repeat until you have 4 layers of biscuits. Spread remaining peanut butter mixture over the top and sides of the cake; dust with remaining cocoa; sprinkle top and sides with chopped peanuts. 3. Refrigerate for 12 hours. Slice thinly and serve
while still cold.

The cake consists of four layers of a Chocolate Buttermilk Cake that has a deep chocolate flavor and is wonderfully moist and dense. It is filled with alternating layers of a peanut butter frosting and a chocolate ganache. The top of the cake is then frosted with more of the peanut butter frosting and the sides are covered with the rest of the chocolate ganache.

Easy, No Bake Peanut Butter Fridge Cake
Recipe for my all time favourite treat. No bake. 4 ingredients, can be made for under £5 and in less than 5 minutes.
I hope you enjoy.
To make this recipe you will need:
- 1 tps Honey (tesco - £1.79)
-2-3 tbs Peanut Butter (Tesco - £1.30)
-12-15 choc chip digestives (tesco - 60p)
- 1 1/2 bars milk chocolate (Tesco - 45p)
Instructions
1) Melt chocolate over heat or in microwave
2) Crush biscuits in a food processor or in a ziplock bag with a rolling pin until they are like breadcrumbs.
3)Blend/ mix in peanut butter and honey. (Looking for 'wet sand' consistency - should hold together when you push it, but not be too sticky)
4)Press into a lined baking sheet or tin.
5)Pour over melted chocolate and chill in fridge for 10-15 mins (for best results leave to chill for an hour/overnight)
6)Cut and Serve! YUM!

No bake chocolate biscuit cake also known as chocolate fridge cake is a must-try treat. Turn digestive biscuits & chocolate into this easy homemade dessert. Only 4-ingredients and ready in 10-minutes.

INGREDIENTS:
18 Digestive Biscuits (3½-4 cups/270 g biscuit pieces) -
2½ cups Dark Chocolate , 70% cocoa (14 oz/400 g) -
½ cup Condensed Milk (300 g) -
1½ stick Unsalted Butter (165 g) -
METHOD:
1. Break the biscuits and throw them in a large bowl.
2. Melt the chocolate and butter over a pot of simmering water (or in a microwave). Remove from the heat. Stir in the condensed milk.
3. Pour melted chocolate over crushed biscuits and stir until all the pieces are well covered with chocolate.
4. Line a loaf cake tin with baking parchment paper (make sure all 4 sides are lined). Fill the tin with biscuit mixture and press down hard using the back of a spoon. Scrape chocolate from the sides of your bowl and pour this over the biscuit cake. Spread evenly.
5. The cake is now ready to be chilled. Cover with tin foil and refrigerate overnight.
6. When set, cut into slices and enjoy!
Preparation: 10 minutes
Makes: 12 Slices (10inch x 3.5inch Tin/25cm x 10cm Tin)
