How To make Peanut Butter Muffins(Am)
2 c AM Whole Wheat Pastry Flour
1 tb Non-alum baking powder
1/2 ts Sea salt (optional)
1/4 c AM Crunchy Peanut Butter
1/4 c AM Unrefined Vegetable Oil
1 1/2 c Fresh milk or water
-OR- milk substitute 4 tb Unsulphured molasses
-OR- raw honey
Stir flour, baking powder, and salt together. Cut in peanut butter and oil with fork or pastry blender until the mixture is like small grains. Add the milk and molasses; stir just until well mixed, but do not beat. Fill oiled muffin tins or muffin cups 2/3 full. Bake 12 to 15 minutes at 350 F. PEANUT BUTTER MUFFINS
Peanut butter muffins with a chocolate struesel
Struesel mix:
1/4 cup flour
1/4 cup brown sugar
1 1/2 tbsp cold butter, cubed
2 tbsp chopped chocolate chips
Muffin mixture:
1 cup flour
1/2 cup packed brown sugar
1 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
1/2 cup milk
1/4 cup peanut butter (I use creamy)
1 egg
2 tbsp softened butter
1) In a stand mixer with a whisk attachment, combine muffin dry ingredients. Flour, brown sugar, baking soda, baking powder and salt.
2) Add in wet ingredients, PB, egg, and butter. Mix on 4 (low-medium) for about 3 mins until batter is smooth.
3) Distribute into 6 liners evenly. (I use an ice cream scoop)
4) Make your struesel. Using a pastry blender combine the cold, cubed butter with the flour and brown sugar.
5) Add chopped chocolate chips.
6) Generously sprinkle struesel on top of each muffin, there will be left over.
7) Bake at 350 for 15-20 mins or until toothpick comes out clean.
8) Let cool for a couple mins and remove from pan and put onto a wire cooling rack.
9) ENJOY!!!

Ingredients
1/2 cup Peanut Butter
250gm Pumpkin
1/4 cup dates honey
2 whole eggs
1/2 tsp vanilla
1/3 tsp baking soda
Pinch of salt
1/4 cup chocolate chip

Oh know what did I do.. I for got to measure out Ingredients I dumped all on one bowl... Thank the lord it all goes in ... So let get started..
1 3/4 c flour
1/4 cup sugar
1 tsp baking powder
1/2 tsp salt
1 cup milk
1/4 c peanut butter
1 egg
1 tsp melted margarine... note I used butter

Mix all ingredients in order in the bowl

Bake @ 400 for 20 minutes
