How To make Peanut Butter & Jelly Cookies
1/4 c Butter or margarine;
-softened 1/4 c Shortening; softened
1/2 c Sugar
1/2 c Brown sugar; packed
1 Egg
1 1/4 c Flour
3/4 ts Baking soda
1/2 ts Baking powder
1/4 ts Salt
Favorite jelly or jam Mix mix butter or margarine, shortening, peanut butter, sugars and egg thoroughly. Blend in remaining ingredients except jelly. Cover & chill. Heat over to 375. Shape dough into 3/4 inch balls. (note: I make htem a bit smaller). Place about 2 inches apart on a lightly greased baking sheet. Bake about 10 minutes or until set but not hard. When cool, put cookies together in sandwhiches with the jelly. About 4 1/2 dozen. You can also shape the dough into 1 inch balls. Roll them in 1/2 cup finely chopped peanuts. Place about 3 inches apart on baking sheet & press thumb in center of each. Bake 10-12 min, and spoon a small amount of jelly or jam into each thumprint. These classic peanut butter and jelly cookies are just so YUMMY and easy to make! This is a great recipe to get your children involved with, especially when it comes to forming and filling the cookies.
This is how to make Peanut Butter & Jelly Cookies:
Peanut Butter and Jelly Cookies
Yields: 28-30 Cookies
Ingredients:
210 g All-Purpose Flour/ 1 1/4 cups
1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
150 g Creamy Peanut Butter/ 3/4 cup
115 g Butter, softened/ 1/2 cup
150 g Brown Sugar/ 2/3 cup
80 g Sugar for rolling/ 1/3 cup
1 Egg
1 tsp Vanilla Extract
150 g Strawberry Jam/ 1/2 cup
Directions:
1. Preheat your oven to 175 °C/350°F. Line your cookie sheet with parchment paper..
2. In a medium bowl, add in flour, baking powder, baking soda, and salt. Give this a quick mix and set aside.
3. In a large mixing bowl, beat peanut butter and butter with a mixer on medium speed until smooth.
4. Add the brown sugar, and beat until pale and fluffy.
5. Add egg and vanilla extract, and beat until fully incorporated.
6. Greadually add in the flour mixture and beat on low speed just until everything is well combined.
7. Scoop about 1 Tbsp of the cookie dough and roll it in sugar then form them into balls, and transfer to your parchment lined baking sheet.
8. Bake until cookies are puffy for about 10 minutes. Remove the cookies from the oven and immediately push down in the center of the cookie making an indent with your thumb or with the handle end of a wooden spoon. Return to the oven and bake until edges are golden for about 7 to 8 minutes more. Let the cookies cool completely.
9. Heat jam in a small saucepan, stirring, until loosened for about 40 seconds. Spoon about 1/2 teaspoon into each indentation and let the jam set for awhile.
