How To make Pastitso Makaronia Me Feta
Karen Mintzias 1 lb Macaroni; cooked & drained
8 tb Butter or margarine; melted
3 Eggs; lightly beaten
1/2 c Grated cheese
1 1/2 c Feta cheese, cubed
Salt White pepper 1 ts Nutmeg, grated
12 Sheets commercial filo
- cut to fit pan, - covered to avoid drying In a large bowl, combine the macaroni, one-third of the melted butter, the eggs, grated cheese, and feta. Season with salt, white pepper, and nutmeg and mix with a wooden spoon. In a buttered 9 x 12 x 3-inch baking pan, spread the macaroni-cheese mixture over the filo and cover with the 6 remaining sheets of filo, brushing butter between each and on the surface. Using the tip of a sharp knife, score the top 3 to 4 sheets to indicate 12 servings. Bake in a moderate oven (350 F) for 30 minutes, or until the surface is crisp. • ingredients:
- 1 pack boiled pasta
- 6-8 eggs
- 1 1/2 cups milk
- 1/2 a cup feta brine ( if you don’t have sub with yogurt or milk)
- 2 cups feta crumbs
- black pepper
• instructions:
- into a large bowl add the eggs and whisk
- then add the milk the feta brine
- into a casserole add the boiled pasta, the feta cheese, the black pepper and mix
- then add the egg/milk mixture over the pasta and mix
- bake into a preheated oven at 400F (200C) for about 30-40’ mins or until is golden brown
-when is ready let it cook for about 30’ mins, cut and enjoy

Best Pastitsio - Greek Pasta, Meat sauce, and Bechamel Casserole
Pastitsio is a very popular and traditional dish. Layers of pasta layered with a savoury meat sauce, then topped off with a rich and creamy bechamel sauce and baked to golden perfection. It's a great dinner entree.
Ingredients:
Keema Saltsa - meat sauce:
1lb (454 gm) ground beef
3 Tbsp (90 ml) olive oil
1 lg onion, finely chopped
4-5 cloves of garlic, finely chopped
2-3 bay leaves
3-4 whole cloves
1 small can of tomato paste (6oz or 170gm)
salt and pepper
water, as needed to cover
Bechamel Sauce:
1 cup (120 gm) all-purpose flour
3/4 cup (175 gm) butter
5 cups (1200 ml) milk
3 lg eggs, slightly beaten
salt & pepper
6 Tbsp (90 gm) Parmesan
Pasta:
pasta of your choice*,
cooked until done, in plenty
of salted water and
drained well before using.
*Use one that has some shape so
they do not clump together.
