How To make Pasta with Winter Squash
1 1/2 lbs squash, butternut
cooked
3 tbsps vegetable broth
1 med onion :
chopped
2 cloves garlic -- minced
1/2 c vegetable broth
1/2 c 1% low-fat milk
1/2 c lf Monterey jack cheese -- shredded
1/2 tsp salt
1/4 tsp pepper
1 tbsp sun-dried tomatoes chopped
12 ozs ziti pasta :
cooked al dente
2 tbsps parsley -- chopped
Cut squash in half, place cut-side down in microwave dish with a little water. Cover and cook on high 10-12 minutes, rotating once. When cool, scoop out flesh and mash with a fork. In frying pan, saute onion and garlic in few tbsp broth until translucent. Add cooked squash, broth, milk and cheese. Stir until cheese melts and mixture thickens somewhat. Season with salt and pepper, turn off heat and stir in sun-dried tomatoes. Pour sauce over cooked pasta and sprinle with parsley.

Bean & Vegetable Chilli (Serves 4):
400g cooked pinto beans
600g tinned tomatoes
200ml vegetable stock or water
4 garlic cloves
1 red onion
1 tbsp. dried oregano
1 tsp. dried thyme
¼ tsp. chilli flakes
1 tbsp. cumin seeds/ powder
1 stalk celery
2 medium carrots
1 pepper
1 tbsp. maple syrup or sweetener of choice
2 tsp. chipotle/ smoked chilli paste (adjust to suit you)
sea salt & black pepper
olive oil
handful fresh coriander

Butternut squash sauce
1 medium butternut squash
1 garlic cloves
¼ scotch bonnet (remove seeds)
black pepper and sea salt
1.5 tbsp. onion powder
35 g soaked Brazil nuts
400ml coconut milk (add more water to thin out if necessary)
1 garlic cloves
1 tsp. paprika
60g breadcrumbs
sea salt & black pepper
2 shallots
4 garlic cloves
1 leek
150g mushrooms
1 tbsp chopped fresh sage
1tsp. dried thyme
1tbsp. dried oregano
splash tamari
black pepper and sea salt
olive oil
300g pasta of choice

My butternut squash fettuccine goes perfectly with this time of year. Its comforting , delightful, and super easy to make. It is the best pasta sauce. Its vegetable base shares similar ingredients to an alfredo sauce giving our vegetable sauce a delightful and similar flavor to a creamy alfredo sauce. The difference is our butternut squash is a vegetable and naturally creamy, so it is way better for us then all the cream in the alfredo sauce. This is THE BEST BUTTERNUT SQUASH RECIPE EVER!!! Whats not to love?
Recipe butternut squash fettuccine
1 (medium size) ea or 1 lb of butternut squash
2 ea garlic cloves
3 ea basil leaves
4 TBSP butter
3 cups chicken stock
1/2 an onion
1/2 cup half and half
8 oz uncooked fettuccine
Salt ans pepper to taste
Toppings: Chili flakes, parmesan cheese and basil.

Baked Pasta With Butternut Squash | #1 Fall Recipe!
This creamy baked butternut squash pasta is the ultimate fall pasta recipe! It's very similar to baked ziti with red sauce but instead, the sauce is made up of stewed butternut squash with chicken stock, butter, and sage. The delicious sauce coats the penne pasta (use ziti, rigatoni, etc) and is mixed with cubed mozzarella and Parmigiano Reggiano cheese. To make it look and taste even better the baked butternut squash pasta is topped with crispy sage leaves. I hope you enjoy this easy fall pasta recipe!

APPLE AND SAUSAGE STUFFED ACORN SQUASH:
INGREDIENTS
- 1 pound penne (ziti, rigatoni, etc…)
- 4 cups butternut squash - cubed
- 1 medium onion - diced
- ¾ cup Parmigiano Reggiano - grated
- ½ pound mozzarella cheese - ⅔ cubed, ⅓ shredded
- 2 ounces tomato paste
- ¼ cup plus sage - chopped and leave some leaves whole
- 2 cups low sodium chicken broth
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
INSTRUCTIONS
1. Saute onion in the butter and garlic over medium-low heat until soft.
2. Add in the tomato paste, chicken stock, butternut squash, chopped sage, salt, pepper, and cook uncovered over medium heat until softened. About 20 minutes.
3. Cook pasta to very al dente. About 2 minutes less than the package instructions.
4. In a large bowl add ¾ of the butternut squash sauce and the pasta. Add in the parmesan cheese and cubed mozzarella. Gently mix together.
5. In a lightly oiled 9 by 13” baking dish add a hefty coating of the remaining sauce to the bottom. Add the pasta and top with any remaining sauce and the shredded mozzarella.
6. Cover with parchment paper then foil and bake for 20 minutes at 400f.
7. Remove the covering and cook for 10 more minutes. If you want the cheese browned broil for a few minutes, but watch carefully to avoid burning.
8. Sprinkle with remaining sage leaves and grate a bit more parmesan cheese on top. Enjoy!

Ok- when I think of Fall flavors butternut squash and sage are high on that list. I wanted to make a dinner recipe using those flavors and then saw spiralized butternut squash at my grocery store and knew I HAD to use them. The result is a spectacularly delicious and very quick low carb dinner that does not skimp on Fall flavor.
