How To make Pasta with Pesto and Chicken
1 Recipe Egg Pasta (or 3/4 Lb
-farfalle or linguine) PESTO 1/3 c Parmesan cheese, grated
4 Clove garlic
1 ts Salt
1 qt Fresh basil leaves, loosely
-packed 1/3 c Pine nuts
3/4 c Olive oil
1 1/4 lb Boneless, skinless chicken
-breasts (4) 1 tb Vegetable oil
Saltpepper PREPARATION: Make the Egg Pasta dough; roll as thin as possible. For farfalle, cut dough into 1-inch wide strips; then cut each strip into 2 inch long pieces. Pinch each piece to form a bow-tie. OR cut dough into 1/8-inch wide strips for linguine.
For The Pesto, grate the cheese. Mash the garlic with the salt to form a smooth paste. Combine the garlic paste, basil, pine nuts, and olive oil in food processor or blender. Puree until smooth. Stir in the cheese. NOTE: Can be made to this point several hours ahead. COOKING AND SERVING: Heat the grill or broiler. Toss the chicken with vegetable oil and sprinkle with salt and pepper. Broil or grill the chicken, turning once, until just cooked through, about 10 minutes total. Cut into bite-size pieces. Cook pasta in boiling, salted water until tender, about 3 minutes for fresh pasta. Drain and return to pot. Toss with chicken and pesto sauce and season with salt and pepper. Serve warm or at room temperature. Makes 4 servings. [COOKS March-April 1988]

Creamy Pesto Chicken w/Pasta
1 1/2 lbs Chicken Cutlet -diced
1 Medium Red Onion -sliced
1 C Pesto Sauce - recipe below or you can buy pre-made
1 C Parmesan Cheese
2 C Heavy Cream
1 lb Pasta - your choice
1/4 tsp Black Pepper
2 Tbsp Butter
Olive Oil
Cook pasta to al dente and set aside.
In saucepan add butter and a drizzle of olive oil, add chicken, onions & black pepper, you may have to do this in 2 batches as not to overcrowd the pan. Once cooked set aside. Add heavy cream to pan and heat just until it comes to a boil, add pesto and parmesan cheese, stir until well combined. Add chicken back to pan, stir in the pasta and serve.
Pesto Sauce
2 C Fresh Basil - stems removed
3-4 Cloves Garlic
1/3 C Pine Nuts - toasted
1/2 C Parmesan Cheese
1/4 tsp Salt
1/4 tsp Pepper
1/2 C Olive Oil
In food processor or blender add basil, garlic, pine nuts, parmesan cheese, salt & pepper, pulse 5 or 6 times until course mixture forms. Turn on low and slowly drizzle in the olive oil.
To store, keep in tightly sealed jar or container. Be sure to cover with olive oil so the basil doesn't
turn black. I also put a piece of plastic wrap over the pesto before I seal the lid.
Keep refrigerated up to 7 days or you can freeze up to 4 months.

Ingredients- Makes 3-4 Servings
1/2 package Spaghetti
4 Table Spoons Pesto
2 Chicken Thighs- Chopped into small cubes
1/2 Medium Onion- Chopped
Olive Oil
Parmesan Cheese
1. Start Boiling water for pasta (high heat)
2. Heat your frying pan on Medium low heat. Once hot, pour some olive oil in and let that heat up.
3. Throw your chicken cubes into the frying pan. Brown on all sides for 2-3 minutes.
4. Once chicken is brown, toss the onions in and continue cooking untill chicken is cooked through (about 2-3 minutes more). Once done, turn off heat and set aside.
5. Once water is at a rolling boil, toss your pasta in. Follow directions of your pasta box.
6. In another large bowl, put half your pesto and half your chicken into the bottom.
7. Once pasta is done, drain and toss into the bowl with the pesto in it. IMPORTANT remember to set aside a little pasta water.
8. Once pasta is in the bowl, throw the rest of the pesto and chicken on top, put about 1/2 cup of pasta water in and mix thouroughly.
9. Once its mixed up, plate into your bowl and add more parmesan and olive oil if you would like.

Pesto Pasta with Chicken
1 lb Bowtie Pasta
3 C Cooked Chicken - shredded or you can use a rotisserie chicken
1/4 tsp Red Pepper Flakes
Pepper to taste
1/2 C Pesto Sauce - homemade or store bought
Parmesan for Garnish
Cook pasta according to directions.
Place shredded chicken in pot, sprinkle red pepper flakes & black pepper. Add pasta & pesto
sauce. Mix well.
Serve with grated parmesan cheese.

Ingredients
1 tbsp avocado oil
1 and 1/2 pounds chicken breast, cubed
1/2 tsp salt
1/4 tsp pepper
1/4 tsp oregano
1/4 tsp basil
1 tsp garlic powder
12 ounces short pasta
1 cup cherry tomatoes, halved
1 cup pesto, (I love Costco's )
1/4 cup parmesan, grated
fresh parsley for garnish
Instructions
Bring a large pot of salted water to a boil. Cook pasta noodles according to package directions.
Heat the avocado oil in a large skillet over medium-high heat.
Place the chicken in the skillet and season it with salt, pepper, basil, oregano, and garlic. Cook for 4 minutes per side or until golden brown and cooked through.
Drain the pasta and pour it into the pan with the chicken. Add the cherry tomatoes and pesto and toss and coat evenly.
Sprinkle with parmesan cheese and fresh parsley. Serve warm, enjoy.
