How To make Pasta with Chicken, Tomato and Romano
1 lb Spaghetti or Linguine
-OR Thin Spaghetti, -uncooked 2 Ripe tomatoes
cored
2 ts Olive or vegetable oil
1 lg Onion
:
peeled & finely diced 4 lg Garlic cloves
peeled & finely chopped 1 lb Boneless chicken breast
:
(skinless), cut into strips 1 t Dried basil
12 md California ripe olives
:
coarsely chopped 1 Green bell pepper
seeds and ribs removed, :
julienned 15 1/2 oz Low-sodium chicken broth
1 c Grated Romano cheese
Prepare pasta according to package directions. While pasta is cooking, cut the tomatoes in half crosswise and scoop out the seeds with your fingers. Chop the tomatoes coarsely. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until the onion is lightly browned and tender, about 6 minutes. Add the chicken and basil and cook until the chicken is lightly browned, about 8 minutes. Stir in the olives, green pepper and tomatoes and cook until the tomatoes begin to give off liquid, about 2 minutes. Add the chicken broth to the skillet, heat to boiling and boil until half of the liquid is evaporated, about 4 minutes. When pasta is done, drain it well and add to sauce mixture. Toss until pasta is evenly mixed with sauce. Transfer to serving dish, top with cheese and serve. Ingredients:
1½ lb boneless & skinless chicken breasts, flattened & tenderized
1¼ cups homemade breadcrumbs, avoid using Japanese
1 cup all-purpose flour
½ cup romano cheese, grated & divided
3 tbsp unsalted butter
3 tbsp olive oil
½ tsp ground black pepper
3 beaten eggs
To Serve:
Roughly 1 tbsp Romano cheese per serving
¼ tsp parsley per serving
½ cup marinara sauce per serving
4 oz pasta per serving

0:12 Prepare your breading station. Place eggs in 1 mixing bowl.
0:16 In another mixing bowl, combine your flour, ½ tsp pepper, and half of the grated cheese. Stir to incorporate.
0:24 In your third mixing bowl, combine your breadcrumbs and the remaining cheese. Stir to incorporate.
0:31 Dredge your chicken in flour, dip in eggs, and coat in breadcrumbs.
0:47 Add half each of butter and oil in a skillet over medium-low heat.
0:57 Once your butter has melted, add your breaded chicken breasts and cook until crusts turn golden brown and the chicken is fully cooked through, roughly 3 to 5 minutes per side.
1:06 Drain your cooked chicken on wire racks to maintain its crispness.
1:08 Serve alongside any pasta of your choice tossed in some marinara sauce. Garnish with parsley and more grated cheese.
