How To make Pasta and Chick Pea Soup
2 ts Olive oil
1/2 c Chopped onion
2 Garlic cloves, minced
1/2 c Drained canned Italian
-tomatoes, chopped 8 oz Drained canned chick-peas,
-reserve 1/2 c liquid 1/2 c Cooked macaroni (shells,
-elbows, ditalini) 1 1/2 ts Shredded fresh basil (1/2
-tsp dried) 1 ds Each salt and pepper
Garnish: basil sprigs In 1-quart saucepan heat oil over medium heat; add onion and garlic and saute until onion is translucent. Add tomatoes and bring to a boil. Reduce heat and let simmer for 5 minutes. Add chick-peas with reserved liquid and remaining ingredients; cook until heated. Serve garnished with basil sprigs. Makes 2 servings. INGREDIENT LIST: (3 to 4 servings)
Boiling Pasta:
200g Pasta - (fusilli pasta OR pasta of choice)
8 cups water
1 heaping teaspoon Salt
Other ingredients:
3 tablespoon olive oil
1 cup onion (125g)
1 cup carrot (150g)
1 cup red bell pepper (150g)
2 cups zucchini
2 Tablespoon Garlic - finely chopped
1 cup cooked chickpeas (UNSALTED from a can - if you are using salted chickpeas adjust the salt accordingly)
Salt to taste (for your reference I have added total 1 teaspoon salt)
1 + 1/2 cups strained tomatoes OR passata OR tomato puree
1/2 cup water
1 teaspoon dried oregano
1/4 teaspoon cayenne pepper (OPTIONAL)
Garnish:
1 teaspoon ground black pepper
2 tablespoon extra virgin olive oil
1/2 to 1 cup fresh basil (roughly chopped) OR 1/4 cup fresh parsley (finely chopped)

How to cook pasta e ceci (chickpea soup with pasta) the original Italian way
chickpea soup - also known as zuppa di ceci or minestra di ceci, is a classic winter dish in Italy. Why? This vegan soup provides plenty of vitamins, minerals, fiber, as well as protein, thus a great replacement for meat. In addition it has many health benefits including improving digestion helping with diet.
In Italy it was originally considered part of cucina povera (poor man's dish), however, its taste & quality is anything but poor. Especially when you follow my video recipe, which includes some typical herbs and spices adding value to this minestra.
If you do not have access to dry chickpeas you may also use canned chickpeas.
Ingredients for 3 persons:
300 g of dry chickpeas
100 g of small pasta type (e.g. ditalini or tubetti)
200 ml of tomato passata (thick tomato juice)
1/2 carrot
some celery
1 bay leaf
some rosemary leaves
1/2 yellow onion
1 garlic clove
1 shot of white wine
extra virgin olive oil
salt
pepper
a few fresh olives (optional)
1 chili (optional)

Join Andy Baraghani in the Bon Appétit Test Kitchen as he makes pasta with tomatoes and chickpeas. If you don't have a can of tomatoes, tomato paste will work just fine. Cook a couple of tablespoons in a small skillet alongside the chickpeas until it darkens before adding to the chickpeas and proceeding with the recipe.
