8 pieces sun-dried tomatoes 1/4 cup garlic -- chopped 1 teaspoon cayenne pepper 1 cup extra-virgin olive oil 24 medium shrimp
peeled 1/2 cup arugula :
chopped 1 teaspoon salt 1 pound cheese tortellini
cooked 1/2 cup romano cheese :
grated Rehydrate tomatoes and cut into julienne strips. Saute garlic and cayenne pepper quickly in olive oil in skillet. Add shrimp and tomatoes. Cook until shrimp are nearly done (see note). Add arugula and salt. Cook just until shrimp are tender. Toss with pasta and cheese in serving bowl.

Penne Rosa | How to Make Penne Rosa like Noodles & Company
This easy Italian dinner penne rosa takes just as long as it does to boil pasta. It is so easy and mega delicious! I was inspired to recreate this after trying penne rosa at noodles and company. They made everything fresh and I couldn’t believe how fast it came together. I love the creamy marinara sauce and the sautéed mushrooms. Top this with chicken or steak! I KNOW you will love this!
½ Pound Penne Pasta (Cook according to package directions) 2 Tablespoons Olive Oil 1 Roma Tomato, Diced 4 Mushrooms, Diced 3 Cloves Garlic, Finely Minced ¼ Cup White Wine 1 Cup Marinara Sauce ¼ Cup Heavy Whipping Cream 2-3 Cups Spinach ½ Teaspoon Red Pepper Flakes (Omit if you don’t like spicy) ¼ Teaspoon Cayenne Pepper (Omit if you don’t like spicy) Salt and Pepper to Taste
| Directions |
Bring a pot of water to a boil and cook pasta according to package instructions.
Meanwhile, heat olive oil in a pan. Add diced tomato and mushroom and sauté for about 2 minutes.
Add the minced garlic and cook until fragrant. About 1 minute.
Add the white wine and simmer for 1 minute.
Add the marinara sauce and season to taste with salt and pepper.
Cook until the sauce is just heated through.
Drain the cooked pasta and add to the sauce.
Add the heavy cream and mix well turning the heat down to medium-low.
Add the spinach and allow a couple minutes for the spinach to wilt and the sauce to heat through.
