Watch us make two authentic Italian recipes with vegetables and a creamy cheese sauce— dishes that certainly inspired the American Pasta Primavera recipe.
First up? Garden Pasta (Pasta all'Ortolana) with spring onions, carrots, celery, eggplant, peppers and zucchini. We'll finish it off with a creamy and easy Parmigiano Reggiano cheese sauce.
Then, we head to Rome for inspiration for a 'Vignarola Pasta' with fava (broad beans), peas, lettuce, mint, spring onions and artichokes! We'll finish that with a creamy Pecorino cheese sauce.
INGREDIENTS
GARDEN PASTA (Serves 4)
✔️ Eggplant - 220 g/ 8 oz (roughly 1/2, diced)
✔️ Zucchini - 1 medium; diced
✔️ Red Pepper - 1/4 large (1/2 minced, 1/2 thinly sliced)
✔️ Yellow Pepper - 1/4 large (1/2 minced, 1/2 thinly sliced)
✔️ Green Pepper - 1/4 large (1/2 minced, 1/2 thinly sliced)
✔️ Celery - 1/2 rib (minced)
✔️ Carrot - 1/2 carrot (minced)
✔️ Onion - 1/2 spring onion (minced)
✔️ Olive oil - as needed
✔️ Butter - 2 tbsp
✔️ Parmigiano Reggiano - 11 tbsp; 3 oz (80 g) (finely grated)
✔️ White Wine - 1 cup
VIGNAROLA ROMANA PASTA (Serves 4)
✔️ Fava beans (broad beans): 9 oz (250 g)
✔️ Peas: 4 oz (120 g)
✔️ Artichokes: 6+; fresh artichoke hearts or hearts from a can
✔️ Romaine lettuce: several leaves (75 g)
✔️ Spring onions: 2
✔️ Mint: 4 leaves (spearmint)
✔️ Extra virgin olive oil: 4 - 6 tbsp
✔️ Salt and pepper: to taste
✔️ Pecorino cheese: 7 oz (200 g)
✔️ Black pepper: 1 tbsp

Pasta Primavera (e79)
Buon giorno a tutti. In this episode, Spring has sprung, and Nonna Mia, la nonna di tutti (everyone's grandmother), is inspired to make pasta primavera. Primavera literally means Spring! So, unsurprisingly, this is a pasta dish that calls for a lot of vegetables. Here, Nonna makes pasta for 6, and uses just over 10 cups of fresh vegetables to a pound of pasta.
Apart from vegetables and the pasta, you will need extra virgin olive oil, garlic/onions, basil, 1/2 cup of cream and freshly grated cheese.
The beauty of this dish is that you can use whatever vegetables that are locally in season - whatever vegetables you love. So, use Nonna's as a guide, and augment to suit your own favourite veggies.
To a cold pan, she adds 1/2 cup of extra virgin olive oil, 3-4 cloves of sliced garlic, 1/2 a red onion, sliced finely and a pinch of hot chilies - to suit your taste. She lets that cook about 2 minutes.
She starts with one red and one yellow pepper because they take a little longer to cook. That's just over 2 cups of sliced peppers. Next one zucchini and 5 mushrooms, sliced are incorporated.
Nonna puts a well-salted pot on the boil and selects her pasta of choice - here she uses casareccia.
A cup of sugar snaps and 10 sliced asparagus are added, and she continues to sauté. Toward the end, she adds 2 cups of cherry tomatoes, and a cup of green onions / scallions.
Cook the pasta a minute less than instructed and add it into the vegetables. You want it to absorb the flavours and finish cooking together. Nonna adds two 'copinos' ladles of pasta water - you may need more - it will depend on how much liquid you prefer.
She seasons with sea-salt and freshly cracked pepper and adds in 1/2 cup of cream, allowing it to simmer for the sauce to thicken up a bit. She then adds a big handful of fresh basil and 1/2 cup of freshly grated Grana Padana cheese, transfers to the platter, and tops again with more Grana Padana.

Italian Grandma Makes Pasta Primavera (Pasta with Vegetables)
PASTA PRIMAVERA:
3-4 Tablespoons Olive Oil
2-3 garlic cloves, sliced
1 cup sliced onion
1 sliced red bell pepper
¼ teaspoon hot red pepper flakes, or as desired
8 ounces Baby Bella & white mushrooms
12 ounces sliced zucchini
6 ounces asparagus
Salt and black pepper to your taste
1 cup frozen sweet peas
8 ounces grape tomatoes, halved
1 pound Rigatoni or pasta of your choice
½ cup grated Pecorino Romano cheese + more to sprinkle on top

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. It is in the province of Foggia in the Puglia region of southeast Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina enjoys making food for her family in the same old fashion ways as she was taught by her mother and grandmother in Italy, and also new things she has subsequently learned from family and friends in America. She also enjoys gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera and behind the scenes?
Grandma Gina’s retired son-in-law, Nick, does the filming, editing, production, and channel management. Her daughter, Maria, helps with food preparation, kitchen setup and fan support. Also, Grandma Gina usually has one or two grand-kids in the kitchen to help.
