SPAGHETTI AL POMODORO SAN MARZANO how to cook pasta with tomato sauce the Italian way
How to cook Italian spaghetti with tomato sauce – also known in the Americas as „marinara sauce“ - the Italian way: spaghetti al pomodoro San Marzano
Spaghetti with a nice slow cooked tomato sugo is one of the most classic Italian dishes, and it is suitable for any occasion. The spaghetti can be replaced by any other preferred pasta type. This traditional Italian first course meal is rather easy to cook, and if you choose quality ingredients – and if you fully watch my video recipe – it is very likely that the result will be exceptional.
Regarding ingredients it important touse quality tomatoes, ideally San Marzano with the D.O.P. certification, which ensures that the tomatoes have really grown in the volcanic soil of the same named area in Campania region and have that charcateristic taste. In addition, quality extra virgin olive oil and quality pasta will make the difference.
Regarding cooking technique, it is important to cook the sugo on low flame for at least 1 hour.
Ingredients for 3 persons:
300 g of spaghetti
400 ml of San Marzano DOP tomatoes
extra virgin olive oil
a bunch of basil
1 garlic clove
a little bit of celery
a little bit of carrot
¼ golden onion
some salt
Parmigiano Reggiano for the topping (optional)

To give as much flavour as possible to this simple tomato sauce you will need to use good quality tomatoes. I'm using cherry tomatoes since in the Netherlands the regular vine tomatoes are usually pretty watery. Cherry tomatoes taste good al year round so using those :)
To make this easy pasta sauce you will need:
200gr pasta of choice
750gr cherry or vine tomatoes
3tbsp olive oil
4 garlic cloves
1/2 red chili pepper
1 onion
1tsp salt
1/2tsp pepper
handful of fresh basil
Start by heating your pan on medium heat. Add the olive oil and let this heat. Then add minced garlic and the chili pepper. Chili pepper isn't traditionally used in a pasta pomodoro but I like using it personally to add some spice. Feel free to not add it though :) Simmer the garlic and chili pepper for 30 seconds, then add the diced onion. You don't need to worry about cutting everything up really fine since we'll blend the sauce in the end anyways.
Let this simmer for about 5 minutes until the onion starts to become translucent. Then add the cherry tomatoes, the salt and the pepper. Since I'm using cherry tomatoes I just add them in whole but if you're using regular tomatoes you can cut them up a bit first.
Let the tomatoes cook with a lid on the pan until they start to pop (about 5-10 minutes). Stir occasionally. In the meantime cook your pasta of choice in salted water.
Once the tomatoes are easy to pop, add everything to a blender with the fresh basil and blend until smooth. Add the sauce back into the pan for easy mixing and mix with the cooked pasta.
Add some salt and pepper to taste and some fresh basil on top, enjoy!
