Jaggery (powdered) - 3 tbsp
Ginger chopped - 2tsp
Lemon juice - 3 tbsp
Soya sauce (light) - 2tbsp
Chilli sauce - 1 tbsp
Peanut butter - 1tbsp
Sesame oil - 1tbsp
For Salad
Mango sliced - 2cups
Cabbage shredded - 1cup
Purple cabbage shredded - 1cup
Capsicum sliced - ½ cup
Raw papaya shredded - 1cup
Carrot juliennes - 1 cup
Spring onions chopped - ½ cup
Mint leaves - a handful
Salt - a pinch
Lemon juice - 2tbsp
Sesame (toasted) - 1tbsp

Very tasty glass noodle salad is well known in Asian countries. There is a variety of such salad recipes – with fried chicken, beef, rice or other glass noodles. Here is a video recipe of glass noodles with vegetables.

✅ Ingredients:
• glass noodles – 7 oz | 200 g
• carrot – 7 oz | 200 g
• bell pepper –7 oz | 200 g
• fresh cucumber – 7 oz | 200 g
• garlic – 3 cloves
• fresh cilantro – 1 oz | 20 g
• soy sauce – 6 tbsp
• vinegar 9% - 3 tbsp
• vegetable oil – 2 tbsp
• sesame oil – 1 tbsp
• sugar – 1 tbsp
• ground coriander – 1 tsp
• red chili flakes – to taste
• sesame seeds – to taste
✔︎ You will need:
• carving board
• deep salad bowl
• colander
• bowl
???? Preparation:
1. Pour the glass noodles with boiling water for 7 minutes or cook as indicated on package instruction.
2. Prepare vegetables: grate the carrot with a korean carrot grater, cut the cucumbers and bell pepper into thin strips.
3. In a bowl combine the chopped up garlic, sugar, ground coriander, chili flakes, soy sauce, vinegar, vegetables and sesame oils.
4. Pour away the water and wash the noodles with cold water, drain in a colander.
5. Into a deep salad bowl lay out the glass noodles, grated carrot, cut cucumber and bell pepper, cilantro leaves, sesame seeds and the prepared sauce. Combine well and leave for 1-3 hours.
6. Serve your glass noodles with vegetables sprinkled with sesame seeds, cilantro leaves or chili rings.

Asian Noodle Salad

Ingredients
Salad:
8 ounces thin spaghetti
One 8-ounce bag julienne/fine-cut carrots (about 1 1/2 cups)
One 6-ounce bag baby sweet peppers, seeded and sliced thinly into rings (about 1 cup)
One 4-ounce bag bean sprouts (about 1 cup)
3 English cucumbers, halved, seeds removed and sliced
3 scallions, sliced
Up to 1 bunch fresh cilantro, chopped
1/2 head or more napa cabbage, sliced
1/2 head or more purple cabbage, sliced
1/2 bunch kale, leaves torn off the stalks and shredded
2 cups peanuts, chopped
Dressing:
1/2 cup olive oil
1/3 cup low-sodium soy sauce
1/4 cup oyster sauce
1/4 cup rice wine vinegar
1/4 cup brown sugar
3 tablespoons chopped fresh ginger
2 tablespoons sesame oil
2 to 3 cloves garlic, chopped
Directions
For the salad: Bring a pot of water to a boil. Cook the spaghetti to al dente according to the package directions. Drain, rinse and let cool.
Mix together the cooked spaghetti, carrots, peppers, bean sprouts, cucumbers, scallions, cilantro, napa cabbage, purple cabbage and kale. Add the peanuts and toss together.
For the dressing: Whisk together the olive oil, soy sauce, oyster sauce, rice wine vinegar, brown sugar, ginger, sesame oil and garlic in a medium bowl.
Pour the dressing over the salad and mix together with tongs or your hands. If the salad seems a little dry, just mix up a little more of the wet ingredients of the dressing and throw it in. It's a very organic process.
Transfer to a large platter and serve.

Salad:
¾ cup napa cabbage, shredded
¾ cup poached & shredded chicken breast
¾ cup carrots, julienned
¾ cup cucumbers, sliced at an angle
½ cup red cabbage, shredded
⅛ cup peanuts, roasted & roughly chopped
2 tbsp scallions or green onions, sliced diagonally
Crispy Noodles:
4 oz rice or vermicelli noodles
Vegetable oil for frying, roughly 3-5 cups
Dressing:
1¼ tbsp peanut butter of your choice
1 tbsp rice vinegar
2¼ tsp lemon or lime juice
2 tsp olive oil
2 tsp honey
1 tsp sesame oil
1 tsp soy sauce
1 tsp hot sauce
1 tsp grated ginger
1 garlic clove, grated
Salt & ground black pepper to taste
To Serve:
⅛ cup peanuts
2 oz vermicelli noodles
2 tbsp scallions

0:11 Preheat your oil ready for frying. Prepare a basket lined with paper towels.
0:14 Deep fry your torn-up noodles until they float and turn crispy.
0:21 Drain onto your lined basket and set aside.
0:26 Prepare the dressing next. In a large mixing bowl, combine all the ingredients together. Whisk until evenly incorporated.
1:10 Season to taste with salt and pepper. Adjust accordingly.
1:23 Combine the salad ingredients into your large mixing bowl with the dressing, including half of the fried noodles, half of the peanuts, and half of the scallions or green onions.
1:59 Toss carefully to combine and ensure that all the ingredients are coated equally in the dressing.
2:07 Portion accordingly. Garnish with the remaining noodles, peanuts, and spring onions or scallions. Serve.
