How To make Passover Cheesecake
32 oz Cream cheese
6 Eggs
1 c Sugar
THE CRUST MIX 1 cn Chocolate macaroons
4 ts Butter; (melted)
1/2 c Almonds
Combine cheese, eggs and sugar in food processor.
Shape crust mixture in a springform pan Then put in cheese mixture. Bake at 350 for 1 hr. till set. Make one day ahead. Can be topped with fresh fruit.

PASSOVER BRISKET:
2 tablespoons dried thyme
2 tablespoons sweet paprika
2 tablespoons dried sage
1 tablespoon freshly ground pepper
1 tablespoon fine sea salt, plus more for seasoning
One 10-pound whole beef brisket
1/4 cup grapeseed oil
8 medium onions (3 pounds) sliced
2 cups beef stock or low-sodium broth
1 cup aged red wine vinegar
1 cup tomato puree
10 garlic cloves, peeled
1 teaspoon black peppercorns
1 bay leaf
3 fennel bulbs (OPTIONAL)
PASSOVER POTATO KUGEL
5 lbs russet potatoes (about 10 medium-sized potatoes)
2 whole large onions
6 eggs
2 tsp salt
1/2 tsp black pepper
6 tbsp potato starch
1/4 cup extra virgin olive oil, divided
ASPARAGUS:
1 bunch asparagus spears (choose the pre-checked asparagus by BODEK)
1 teaspoon butter
¼ teaspoon salt
3 cups water
MASHED POTATOES:
2.5 lbs of potatoes
1 stick of margarine
1/2-1 cup of plant based milk
salt, pepper, garlic powder to taste

CAKE:
1/2 cup (1 stick) unsalted margarine if served with meat , cut into 1 pieces, plus more, room temperature, for pan
3/4 cup plus 2 tablespoons sugar, divided, plus more for pan
10 ounces semisweet or bittersweet chocolate (61%-72% cacao), coarsely chopped
2 tablespoons vegetable oil
6 large eggs
2 tablespoons natural unsweetened cocoa powder
1 teaspoon vanilla extract
3/4 teaspoon kosher salt
Topping:
1 cup chilled heavy cream/ or any non dairy creamer
1/2 cup mascarpone (optional)
3 tablespoons powdered sugar

Recipe:
2 sticks of parve butter/margarine
200gm chocolate
1 cup of Sugar
7 eggs separated
Bake at 375F for 35minutes

- 4 ounces semisweet chocolate, melted
- 16 ounces (2 packages) PHILADELPHIA Cream Cheese
- 1 pint (2 cups) container dairy sour cream
- 1/2 cup confectioners’ sugar
- 2 teaspoons grated fresh orange peel
- 1 tablespoon Passover chocolate liqueur or chocolate-orange liqueur, optional
Cherry Compote
- 1 cup frozen pitted cherries, defrosted
- 1/3 cup sugar
- 1/3 cup water

RECIPE:
INGREDIENTS
For crust
1/3 cup sugar
1 cup matzo meal
8 tablespoons butter
Filling
3 8-ounce packages cream cheese softened
3/4 cups sugar
3 eggs
2 tablespoons vanilla extract
Equipment: a 9-inch springform
PREPARATION
Make crust:
Preheat oven to 350F with rack in middle.
sugar, matzo meal in a food processor until finely ground. Transfer to a bowl and stir in butter until combined well. Press onto bottom and 1 inch up side of springform pan. Refrigerate for one hour.
Make filling and bake cheesecake:
oven temperature to 300°F.
Beat together cream cheese and sugar in a bowl with an electric mixer at medium speed until smooth, 1 to 2 minutes. Reduce speed to low and add eggs 1 at a time, mixing until incorporated. Mix in vanilla.
Put springform pan in a shallow baking pan and pour filling into cooled crust. Bake until filling is set 1 1/2 inches from edge but center is wobbly, 45 to 50 minutes (filling will continue to set as it cools). Transfer cake in pan to a rack and immediately run a knife around edge, then remove side of pan. Cool completely, 2 to 3 hours.
Cheesecake can be made 2 days ahead.
