How To make Parchment Wrapped Chicken
2 Whole chicken breasts,
Skinned and boned 3 tb Dark soy sauce
1 ts Ginger juice*
1/4 ts Sugar
Boiling Water 1/2 lb Fresh bean sprouts
6 Green onions with tops, cut
Into 2 inch lengths and Slivered 1/3 c Chopped walnuts
8 8 inch squares of parchment
Paper PAPER Cut eight 8 inch squares of parchment paper. INGREDIENTS Cut chicken into thin, narrow strips, about 3 inches long. Combine soy sauce, ginger juice and sugar in large bowl; stir in chicken, let stand 30 minutes. Meanwhile, pour boiling water over bean sprouts; let stand one minute. Drain; cool under cold water and drain well. Thoroughly toss chicken mixture with bean sprouts, green onions and walnuts. Place about 1/2 cupful of chicken mixture in center of each parchment square. Fold bottom point of parchment over filling; crease just below filling and fold point over and under filling. Fold side points over filling, overlapping slightly. Crease paper to hold folds. Fold remaining corner down so point extends below bottom of bundle; tuck this point between folded sides. Crease paper to hold folds. Repeat with remaining parchment squares. (Ends up looking like small envelope, with flap tucked under bundle) Place bundles seam side down, in single layer on steamer rack. Set rack in large pot or wok of boiling water. (Do not let water level reach the bundles) Cover and steam about 7 minutes or until chicken is tender. Grilled Barbecue Chicken and Vegetables in Foil Recipe
GRILLED BBQ CHICKEN and VEGGIES IN FOIL! Juicy and delicious chicken covered in sweet barbecue sauce and grilled in foil packs with zucchini, bell peppers, and asparagus.
FULL RECIPE:
Ingredients
8 aluminum foil sheets large enough to wrap around one chicken breast
4 (4-ounces each) boneless, skinless chicken breasts
1/2- cup barbecue sauce (use your favorite)
1 zucchini , sliced into thin rounds
1 red , green or yellow bell pepper, cut into thin strips
8 asparagus spears
salt and fresh ground pepper , to taste
extra virgin olive oil
Instructions
Preheat the grill to medium-high heat.
For each foil pack, prepare two sheets of aluminum foil; place the sheets one on top of the other for durability.
Place one chicken breast on each stacked pair of foil sheets; season with salt and fresh ground pepper.
Brush each chicken breast with 1 to 2 tablespoons barbecue sauce.
Divide equally and arrange vegetables around each chicken breast; season with salt and pepper.
Drizzle chicken and vegetables with little olive oil.
Fold the sides of the foil over the chicken, covering completely; seal the packets closed.
Transfer foil packets to the preheated grill rack and cook for 20 to 25 minutes, or until done, turning once.
Chicken is done when thermometer reads 165 F.
Allow the chicken to rest for a few minutes.
Serve.
IF COOKING IN THE OVEN
Preheat oven to 400F.
Prepare chicken as directed above.
Seal the packets closed and transfer to a baking sheet.
Bake in the oven for 25 minutes, or until done.
Remove from oven and carefully open up the foils; put the packets under the broiler for 3 to 4 minutes.
Remove from broiler.
Brush with more barbecue sauce. (optional)
Serve.

2 tablespoons shaoxing huatiao wine
2.5 tablespoons oyster sauce
1 tablespoon dark soya sauce
1 teaspoon grounded angelia root powder
some pepper to taste
1.5 cups of water
cornstarch solution
Stuffing for chicken

7 pieces of angelica roots
2 pieces of de-pitted dried red dates
8 pieces of yuzhu
2 pieces of mountain yam or shan yao
1 - 2 tablespoons of wolfberries

You’ll need
600g chicken
½ tsp ground black pepper
1 tsp ground red pepper
2-3 tbsp olive oil
3 carrots
2 long red peppers
1 potato
10-15 shallots
1 cup peas
2-3 cloves garlic
1 tbsp tomato paste
120 ml hot water
1 tsp salt
Here’s how
1. Combine 600g of chicken, ½ tsp of ground black pepper, 1 tsp of ground red pepper and 2-3 tbsp of olive oil in a shallow dish.
2. Cover with cling film and place in the fridge to marinate for 1-2 hours.
3. Cut the peeled carrots and potato into small cubes. Dice the red peppers into small pieces.
4. Transfer marinated chicken into a hot skillet and saute over medium heat on each side until cooked through.
5. Add the shallots, chopped carrots, potatoes, red peppers and 1 cup of peas. Stir until well blended.
6. Add 2-3 cloves of garlic and 1 tbsp tomato paste and give it a good stir.
7. Add 120 ml of hot water and 1 tsp salt. Give it another quick stir, then remove from the heat.
8. Place a sheet of parchment paper on your counter top and place the chicken and vegetables in the center of the parchment paper.
9. Fold the parchment paper on top of the chicken from the two edges. Fold the other edges of the paper together, pressing firmly as you roll, to close tightly.
10. Place the rectangular packet on the baking sheet.
11. Bake in the preheated oven to 180 degrees about 20-25 minutes.
12. Remove from the oven, and very carefully open the packets, watching out for the steam.
13. Serve immediately. Enjoy!
