How To make Pancakes with Mushrooms
batter:
1 c Milk
2 Eggs
1 c Flour
1/2 c Water
1/2 ts Salt
3 tb Salad oil
stuffing:
2 tb Butter
1 Onion, sliced
10 oz Mushrooms, sliced
2 tb Water
2 Slices white bread
Salt and pepper 3 tb Bread crumbs
2 tb Butter
Heat the butter in a skillet, add onions, and fry until golden. Add mushrooms and 2 tablespoons water, cover and cook on low heat for 5 minutes. Soak the bread in water, squeeze. Put everything through a grinder, season with salt and pepper. Mix until creamy. Spoon a little of the stuffing into the center of each pancake and fold the pancakes envelope fashion to encase the suffing completely. Roll each stuffed pancake in leftover batter and in bread crumbs. Fry in hot butter until golden on both sides. Yields 15 pancakes.

These two healthy pancakes are great side dishes and snack for any Korean meal any time of the day. I like my pancake to have mostly buchu and less of pancake batter. It is crispy and savory. I have been eating enoki mushroom more often and have been adding them to lot of my dishes these days. They are very addicting. It is so delicious fried. I also enjoy them in stew or soup.
INGREDIENTS
Korean chives pancake:
6 oz Korean chives (buchu), cut them into 2 inch long pieces
1 cup Korean pancake mix
1 1/2 cups water
1 tsp fish sauce
5 shrimps, sliced in half lengthwise
Enoki mushroom pancake:
1 pack enoki mushrooms, woody stem removed, rinsed, pat dried and cut in half
2 tbsp Korean pancake mix
2 eggs
1 red chili pepper
2 green chili peppers
1/2 tsp oyster sauce
Pancake dipping sauce:
2 tbsp soy sauce
1 tbsp vinegar
1 tbsp water
1/2 tsp sugar
1/2 tsp sesame seeds

INGREDIENTS:
Pancakes
-400g enoki mushrooms (equivalent to 2 packs) woody stems removed, rinsed and pat dried
-2 Tbsp all purpose flour (or rice flour)
-1 tsp sesame oil
-2 extra large eggs, beaten
-1 medium carrot, julienned
-1 small onion, finely diced
-1 toe of minced garlic
-¼ cup finely grated purple cabbage
-¼ tsp fine sea salt (or more to taste
-ground black pepper
-Some cooking oil (we used coconut)
Sauce
3 Tbsp coconut sugar
2 Tbsp soy sauce
2 Tbsp water
2 Tbsp rice vicegar
½ tsp sesame oil
¼ - ½ tsp sambal chili sauce
¼ tsp crushed garlic

Enoki Mushroom Pancake
1 Pack 7oz Mushrooms
1/4 C Red Pepper
1/2 C Onion
1/2 C Kale or Cilantro
-Batter:
2 tbsp Garlic Powder
1 tsp Onion Powder
1 1/2 tsp Salt
1 tsp Pepper
1/2 C Cornstarch
1/4 Flour
2 Eggs
1/4 Water
1 1/2 tsp Baking Powder
