This is a great cake to use for Tiaramisu ,Cassata Cake ,or any type of filling or fruit.
4 extra large eggs room temperature
1/2 cup + 1 1/2 Tablespoons granulated sugar
1 teaspoon vanilla
1 teaspoon vanilla
1 cup + 1 Tablespoon all-purpose flour
Beat eggs for 10-15 minutes till they are light and fluffy and pale yellow.
Slowly add sugar and vanilla beat till very fluffy.
Sift flour over batter a little at a time and fold gently till all flour is folded in.
Grease a 8x3 round cake pan dust with flour
Pour batter into pan don't level pan or tap bottom of pan.
Bake at 340 for 30-40 minutes depending
Do not open oven to check cake before 20 minutes it could make the cake deflate.
After cake is baked shut of oven and leave cake in oven for 10 minutes with oven door ajar.
Place cake pan on cooling rack

So delicate, it is the perfect sponge, fluffy soft base for any kind of cake and takes on moisture nicely from fruit, alcoholic, and non-alcoholic syrups and frostings.
Before you start to make this cake preheat the oven at 325°F 160°C for about 45-50 minutes and grease and flour an 8-inch springform cake pan (20 cm).

INGREDIENTS
1/3 cup and 1 Tablespoon of Potato starch (60g)
1/2 cup of 00 or all-purpose flour (60g)
1/2 cup and 2 Tablespoons of granulated sugar (120g )
4 medium eggs (Room temperature)
Optional 2 teaspoons of vanilla sugar, vanilla extract, or lemon zest.
Beat the eggs and sugar with a stand mixer for a minimum of 10 minutes at medium speed. 15 to 20 minutes is optimal. It is during this stage that air gets incorporated.
Sift the flour and potato starch together (at least 2 times)
With a hand whisk, incorporate the flour mix to the eggs one tablespoon at a time, slowly turn in the flour so you don't deflate those beautiful eggs.
Pour the batter in the cake pan and use a toothpick in a circular motion without touching the bottom to smooth the batter and to get rid of the bigger air bubbles.
Bake in the lower part of the oven at 325°F 160°C for about 45-50 minutes (depends on your oven).
Do the toothpick test, if it comes out dry then the sponge cake is ready.
REMEMBER: do not open the oven for the first 30 minutes!
Our advice is to prepare this base the day before, let it cool completely then sealed entirely with cling film. It will be more compact, easy to cut it, and also ready to be wet with a liqueur or syrup.

How To Make Italian Sponge Cake - Pan di Spagna (e91)
Buon Giorno A Tutti! In this episode, Nonna Mia, la nonna di tutti (everyone's grandmother), bakes up a delicious Italian Sponge Cake - Pan Di Spagna. This is a simple 3-ingredient cake: eggs, sugar, and flour…with no baking powder. It is even oil and dairy-free.
Pan di Spagna / Italian Sponge Cake is a highly versatile cake that you can enjoy plain, just dusted with powdered (icing) sugar, or drizzled with liqueurs, creams, fruit or really, whatever your heart desires. It was originally made in honour of the Spanish court in the 18th Century and as such, it takes it name from Spain (Spagna).
Here are the ingredients that you will need for the sponge cake:
- 6 extra large eggs (at room temperature)
- 200 grams of sugar (1 cup)
- 200 grams of flour (1.5 cups)
- pinch of salt
- 5 ml (1 tsp) of vanilla extra (or lemon zest, or almond extract as desired)
You will want to use a standing mixer for this recipe as it requires 15 to 20 minutes of whipping. There is no baking powder or leavening agent - the air, incorporated while beating, helps the cake to rise.
As you are beating the eggs, you will want to slowly add in the sugar. Once the eggs and sugar are fluffy and form ribbons when lifted, you can then add in the vanilla extract (or alternative) and a pinch of salt. Mix in then, slowly add in 200 grams (about 1.5 cups) of flour. Be gentle as you will want to keep the batter light and airy.
Grease a 25 cm / 10-inch spring-form pan and add the batter. You will bake this in an oven preheated to 340F / 170C. It will take about 35 minutes, but do not open the oven for the first 30 minutes. Test with a toothpick or spaghetti stick (as Nonna always does) to ensure it comes up clean. Once done, turn the oven off, slightly open the oven door and leave for another 5 minutes.
Allow to cool and then remove from pan, placing the cake on a cooling rack.
Once cooled, dust with powdered (icing) sugar, or proceed to dress it up as desired. Here, Nonna adds whipped cream and strawberries. If you wish to make this version, you will also need the following ingredients:
- 500 ml (2 cups) of 35% whipping cream (whipped)
- 80 ml (1/3 cup) liqueur (Nonna uses Amaretto), you could certainly add more if you wish
- 250 ml (1 cup) of strawberry jam
- about 500 grams of fresh sliced strawberries
- 25 grams (1/4 cup) sliced almonds
- balsamic glaze (optional)
With a spoon, drizzle the liqueur all along the cake surface. Then smooth on the strawberry jam. Whip up the whipping cream, and spread across, add fresh sliced strawberries, and some more cream if desired. Top the cake with the other layer, spread the whipped cream, top with the strawberries, sprinkle the sliced almond and drizzle with balsamic glaze (optional).

Welcome back to another italian basic knowledge, how to! Today we will make a basic recipe for several italian dessert: Pan di Spagna
This recipe is very classic and genuine without Baking Powder, Oil, Butter or Milk and will be useful for a great classic dessert here in tuscany, Zuccotto that will be online this thursday!!!

INGREDIENTS
200 gr eggs ( room temperature )
150 gr egg yolks ( room temperature )
190 gr sugar
85 gr all-purpose flour
85 gr potato starch
vanilla bean or a teaspoon vanilla extract
grated lemon zest
Mix 200 gr eggs with a whisk
take 150 gr egg yolks and add grated lemon zest
add the inside of a vanilla bean or the vanilla extract
mix well the egg yolks with a whisk
sift 85 gr all-purpose flour and 85 gr potato starch in a mixing bowl
sift the mixed flours again
put the eggs in a stand mix
begin to beat the eggs at medium/high speed and add 190 gr sugar
when the eggs begin to turn to a pale yellow add egg yolks a little at the time.
Continue to beat the eggs until very fluffy and pale yellow (about 15 minutes on medium/high speed)
To test that it has been beaten enough, let a small amount of batter fall into the mixing bowl. If it remains sitting on top, it means that it's ready.
Add the flours in two times, slow down the stand mix at medium/low speed
butter a springform pan ( 22 cm diameter )
Pour the batter into the prepared pan
preheat the oven at 180°
Cook for 25/30 minutes (keep the door slightly open using a wooden spoon or a little ball of tin foil)
Insert a toothpick and if it comes out clean the pan di spagna is ready
Remove the pan di spagna from the oven, let it cool
