Moms Palak Paneer
INGREDIENTS TO MAKE THE RECIPE:
1 tsp Sugar
350 Gms Palak
3 Gree chillies
Coriander Stems (some)
1 tsp Oil (for Grinding Palak)
For Masala
2 Laddle Mustard Oil
1 Inch Ginger
5 - 6 big Garlic Cloves
2 Onion
3 Tomatoes
1 tsp Jeera
2 Tej patta
1/2 tsp Haldi Powder
1 tsp Red Chilli Powder
2 tsp Coriander Powder
1.5 Salt
4 Tbsp Curd
1 tsp Garam Masala
1 tsp Kasuri Methi
1 Tbsp Atta
Coriander Leaves
2 Tbsp Malai
400 Gms Paneer
For Tadka
2 tsp Desi ghee
4 Garlic Cloves (chopped)
2 dried Red Chillies
1/2 tsp Kashmiri Red Chilli Powder
Palak Paneer | पालक पनीर कैसे बनाते है | All Time Favourite Recipe | Sanjeev Kapoor Khazana
One of the most loved recipes - palak paneer! Mainly made with mildly spiced spinach curry and paneer, goes so well with roti or even just as it is.
PALAK PANEER
Ingredients
2 medium bunch of spinach (palak)
400 grams cottage cheese (paneer)
2 green chillies
1 tbsp ghee
1 tsp cumin seeds
1 tbsp finely chopped garlic
1 medium onion, finely chopped
Salt to taste
½ tsp garam masala powder
¼ tsp dried fenugreek leaves (kasuri methi) powder
2 tbsps fresh cream + for garnish
Ginger strips for garnish
Whole wheat paranthe to serve
Method
1. Trim the stems of the spinach leaves and wash them thoroughly.
2. Bring sufficient water to a boil in a deep pan. Add the spinach leaves, mix and cook for 1-2 minutes. Drain into ice cold water.
3. Squeeze the excess water from the blanched spinach leaves and transfer into a grinder jar. Break the green chillies and add into it. Grind to a fine paste.
4. Cut the cottage cheese into 1-inch cubes.
5. Heat ghee in a pan. Add cumin seeds and let them change colour. Add garlic, mix and cook for 1 minute.
6. Add onion and sauté till translucent. Add the ground paste, mix and cook for 1-2 minutes. Add salt and mix well.
7. Add cottage cheese, garam masala powder, dried fenugreek leaves powder, fresh cream, and gently mix till well combined.
8. Transfer on a serving bowl, garnish with fresh cream, ginger strips, and serve hot with paranthe.

PALAK PANEER
Preparation time: 10 minutes
Cooking time 20 minutes
Serves: 2

Ingredients:
2 bunches, Palak leaves, cleaned, (blanched then in ice cold water )
1 inches ginger, grated
2-3 garlic pods, roughly chopped
2 green chili, chopped
For Palak Paneer
1 tbsp Ghee
1 tbsp oil
¼ tsp cumin seeds
3-4 cloves
1 bay leaf
Pinch of asafoetida
2-3 small onion, chopped
2-3 garlic pods, chopped
1 medium Tomatoes, chopped
1 tsp coriander seeds, roasted and crushed
1/2 tbsp. kasoori methi, roasted and crushed
½ tsp Turmeric powder
1 tsp Red chilli powder
2-3 leaves of spinach, chopped
2 bunches Spinach, blanched and puree
½ cup hot water
250-300 gm Paneer, cut into cubes
1 tbsp Fresh Cream
Salt as per taste
Garnish
Ginger, julienne
Fresh cream
Process
• In pot blanch spinach leaves in boiling water for 2-3 minutes. Remove and transfer
immediately into ice cold water.
• Now into blender add ginger, garlic and make paste then add cooked palak and make
smooth paste
• For palak paneer heat ghee in pan and add bay leaf, cumin seeds, asafoetida. Stir for a
minute until fragrance goes off.
• Now add onion and garlic, saute until they turn translucence. Add tomatoes and stir till they
turn soft. Add turmeric, red chilli, kasoori methi, crushed coriander seeds and some coriander powder and mix well. Add some chopped palak leaves.
• Now add prepared palak puree, hot water, adjust salt and give a nice stir.
• Transfer paneer cubes, sprinkle garam masala and allow it to cook for another a minute.
• A finish with fresh cream and fold it into gravy.
• Garnish with ginger julienne and fresh cream.
