FullyRaw Vegan Pad Thai with Mom and Me!
Try the Raw Vegan Pad Thai with mom and me! Join us as we have fun in the kitchen making this delicious Asian, ethnic dish!
Ingredients for the Pad Thai:
4-5 cups shredded zucchini
2-3 cups of shredded carrots
1 cup shredded red cabbage
1 sliced red bell pepper
1-2 cups of sliced mushrooms
1 cup bean sprouts
Half a cup chopped cilantro
1 cup of sliced scallions or green onion
Thumb of ginger
Juice of one lime
Quarter cup of crushed pistachios as a topping
Fresh mint
Optional: Jalepeño
FullyRaw Sesame Ginger Dressing:
3/4 cup raw, unhulled sesame seeds
1/2 cup fresh apple juice
1/3 cup orange juice
1/4 cup crushed pistacchios
1/4 cup tamarind sauce
1 thumb fresh ginger
Half to 1 lime squeezed

Vegan Pad Thai
For full recipe:
Vegan Pad Thai
For sauce:
- 3 1/2 tablespoons sugar
- 4 tablespoons vegan fish sauce (recipe link below)
- 3 tablespoons tamarind paste
- 1 tablespoon lime juice
- 1 teaspoon Sriracha
-1 teaspoon soy sauce-
- 1 tablespoon rice vinegar
For the pad thai:
- 4 servings rice stick noodles, soaked in cold water
- 2 tablespoons vegetable oil
- 4 garlic cloves, chopped
- 1/2 cup extra firm tofu
- 1/2 cup vegan chicken breast, shredded into strips
- 1/2 cup firm tofu, crumbled
- 1 teaspoon turmeric
- 1 tablespoon nutritional yeast
- 1/8 teaspoon salt, more to flavor
- 3 - 4 stalks scallion, quartered into 2-inch long strips
- 1 cup bean sprouts
- 1/4 cup dry-roasted peanuts, chopped
