How To make Oyster Casserole
6 tb Fat
1/2 Small onion, sliced
1/4 lb Fresh mushrooms, sliced
4 tb All-purpose flour
1 ts Salt
1 ts Paprika
Dash of cayenne 2 c Milk
2 Dozen raw oysters, with
Their juice 3 Hard-cooked eggs, sliced
2 tb Cooking sherry
Heat fat, add onions and mushrooms. Cook until tender and remove from pan. Blend flour with fat, add seasonings, let boil 2 minutes and add milk gradually. Cook oysters in their own liquor until edges curl and add oysters and liquor to creamed mixture. Add mushrooms, onion and eggs; stir in sherry. Turn into greased casserole and bake at 400F for 15 minutes. Serve on toast or pastry shells. Serves 4 or 5 Source: Heritage Collection ch. -----

1/4 C Heavy Cream

1 Egg Yolk
Parmesan Cheese

if you prepare this a day before just saute all the ingredients and put everything in the oyster shells wrap it and refrigerate .... then all you need to do is bake and serve day of the party.

NEW ORLEANS OYSTER RECIPE
A dish that is usually ordered as an appetizer or a side dish.
There is a restaurant in West Westwego, Louisiana which is about 30 minutes from New Orleans called Mosca's. They made the dish Oysters Mosca which is actually very similar to our Oysters Parmesan. Very similar.
We've been making Oyster's Parmesan for many years served mostly as an appetizer to our main dish.
If you try this recipe, please let us know how you like it.
I bet you can use clams if you aren't able to get oysters.
But if you can, I've listed the ingredients below.
INGREDIENTS
1 PINT FRESH OYSTERS WITH OYSTER LIQUER
1 YELLOW ONION CHOPPED
1 RED ONION CHOPPED
5 TOES GARLIC MINCED
1 1/2 CUPS ITALIAN BREAD CRUMBS
1/4 CUP PARMESAN CHEESE (FRESHLY GRATED)
1/2 CUP OLIVE OIL (NOT EXTRA VIRIN)
4 STRIPS BACON FRIED CRISP (RESERVED)

Hearty Creamy Oyster Stew Recipe Perfect for the Holiday Season
Creamy oyster stew is a Christmas tradition for many families. After wondering where it came from, it turned that this tradition came from Irish immigrants who used to eat soup or stew of fish on Christmas Eve as Catholic tradition banned meat on Christmas Eve. I have eaten many versions of oyster stew and many of them seem very simple with milk, butter, salt and pepper, which doesn't really justify the word stew in the name oyster stew. Maybe more like a soup. While I don't mind the simple version, the soup boy in me wanted to create something heartier and elevated to create a wow factor. This oyster stew recipe includes some components that a good clam chowder would have such as bacon, celeries, and potatoes elevated with flavors from dry white wine, fresh thyme leaves, white pepper, and cayenne pepper. This is kind of a whole she-bang goodness kind of oyster stew. Despite using all these elements, the final product does not hide oyster flavors at all. Those big chucks of oysters and all the oyster juice from the jar provide a deep and intense oyster flavor throughout the dish.
Ingredients:
3 bacon strips
¼ stick butter
1 shallot
4 cloves garlic
1/3 potato
1 celery stick
½ cup dry white wine
3 cups whole milk
1 cups half & half
½ tsp white pepper
½ tsp salt
¼ tsp cayenne pepper
1 tsp thyme leaves
2 tsp corn starch & 2 tbsp water
1 jar of fresh oysters
1 tsp fresh parsley
green onion to garnis
