One-Pan Easy Stuffed Fish and Orzo | Ereka Vetrini

Ingredients:
4 tbsp olive oil
2 tbsp melted butter
1/2 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
2 tbsp fresh parsley
1 tbsp fresh oregano
2 lemons + 1 tsp lemon juice
1 cup defrosted frozen peas
1 broccoli head broken down into small florets
2 cups orzo
3.5 cups chicken or vegetable broth
6 flounder filets (you can swap with sole filets)
6 ounces feta
2 cups frozen spinach
-Preheat oven to 400F
-To a 4.5 qrt baking dish, add 3 tbsp olive oil, lemon juice, salt, pepper, garlic powder, juice of one lemon, parsley and oregano. Use a fork to mix ingredients.
-To the same dish add peas, broccoli florets, orzo and broth.
-Cover with lid or aluminum foil and cook in oven for 20 min.
-While the orzo cooks, defrost the frozen spinach and drain any excess water.
-Add 4 ounces feta, all the spinach, 1 tsp of lemon juice and remainig 1 tbsp olive oil to a medium sized bowl, mix well and set aside.
-Lay out your flounder and season both sides with salt and pepper. Place about 1.5 tbsp of feta mixture, roll as shown and set aside.
-Remove orzo from oven, add feta and mix well.
-Nestle stuffed flounder into the orzo as shown. Top with lemon slices and cook uncovered for 17 minutes.

Ingredients
2½ cups low sodium chicken broth
1½ cups dry orzo pasta (about 278 grams)
2 cloves garlic (finely minced)
½ teaspoon salt
¼ teaspoon black pepper
⅓ cup cream (any kind -- heavy cream will give richer flavor, light cream will be a bit thinner)
¼ cup shredded Parmesan cheese
2 tablespoons fresh parsley
Instructions
Combine broth, pasta, garlic, salt and pepper in a medium skillet.
Bring to a boil over medium-high heat, then reduce to medium-low and simmer, stirring often (you can cover or leave uncovered). Cook until most of the liquid is absorbed and the pasta is cooked to your preference. (If you want to cook the pasta further but the liquid is gone, just add a splash more broth).
Stir in cream, Parmesan and parsley. Serve.

There’s a secret to making the most refreshing summertime orzo pasta salad! My secret ingredient is freshly squeezed orange juice. The orange juice gives this salad the lightest most refreshing taste with a hint of sweetness. I encourage you to also add orange zest if you want more citrus in this dish.
This salad has crunch from the veggies, creaminess from the feta, and zest from the orange juice. It is the perfect summer dish.
Whenever I serve this salad on the table I get bombarded with questions on how to make it. Now that you know my secret, please give it a try this summer when you’re hosting or bring it along if you’re being hosted. I promise, this salad will be first to disappear from the table. This recipe is the perfect side for meal-prep and you can make it ahead of time.
INGREDIENTS
one small pack of orzo (340 grams) boiled to al-dente in salted water
¼ cup of olive oil, to taste to taste
½ cup freshly squeezed orange juice
3 finely diced mini cucumbers
2 finely diced tomatoes
½ finely diced bell pepper, to taste to taste
½ of a finely diced red onion I soaked mine in water for 20 minutes to make it milder
½ cup finely chopped fresh parsley to taste
1 tablespoon dry oregano
salt to taste
crumbled feta measure with your heart
olives are optional* I didn’t have any on hand
