How To make Orzo Confetti Salad
Ingredients

cup
orzo, rice shaped pasta, uncooked
1
salt
1/3
cup
carrots, finely chopped
1
each
tomato, plum, seeded, finely chopped
1/3
cup
bell pepper, green, finely chopped
1/3
cup
celery, chopped
1/3
cup
onion, red, finely chopped
1/3
cup
parsley, fresh, minced
1
pepper, freshly ground
1
each
belgian endive, up to 2 heads, leaves separated
1
each
radicchio, up to 2 heads, leaves separated
DRESSING:
3
tablespoon
vinegar, white wine
1
teaspoon
mustard, dijon
6
tablespoon
oil, olive
Directions:
Bring a large saucepan of water to boil over high heat. Add orzo and 1 tb salt and boil for about 8 minutes,or until pasta is tender but still slightly firm. Turn orzo into a sieve, rinse under cold water to stop cooking, and drain well.
Dressing: In a small bowl, combine vinegar and mustard, then whisk in oil.
Bring small saucepan of water to boil over high heat, add carrots, and blanch for 2 minutes. Drain in a colander.
In a large bowl, combine orzo, carrots, tomato, green pepper, celery, onion and parsley. Add dressing, season with salt and pepper, and toss to combine well. Serve with endive and radicchio.

Recipe will feed 6 people :
Start by boiling
500g of Orzo
2 tbs of saffron
2tbs of salad
• For the salad you need :
500g of boiled orzo
1 Finely chopped red pepper
1 medium Finley shopped red onion
150g or roughly shopped slow roasted tomatoes ( you can find this in @morrisons )
Handful of chopped Basel and chives
• now for the salad dressing :
2 minced garlic ( paste )
1 tsp of salt
1 tsp of sugar
1/2 lemon juice
2 tsp of black pepper
1/4 cup of Basel oil
1/4 cup of sunflower oil
1/2 cup of red wine vinegar
So easy so simple and soooooo delicious
I had mine with some grilled lemon and pepper chicken ????????

This simple Greek Pasta Salad is just the thing for potlucks and summer cookouts! The textures of crunchy veggies, al dente pasta, and flavors of a savory Greek dressing and feta cheese make this one of the best summer salads around!

GREEK PASTA SALAD INGREDIENTS:
Salad
o 8 ounces bowtie pasta
o 1 1/2 cups grape tomatoes , sliced in half
o 1 seedless cucumber , sliced into half-circles or quarters
o 1 bell pepper , diced
o 1/2 small red onion , diced
o 1/2 cup Kalamata olives , drained
o 2/3 cup feta cheese , crumbed or cubed
o 1/4 cup chopped fresh parsley
Dressing
o 1/2 cup olive oil
o 1/4 cup water
o 3 tablespoons red wine vinegar
o 2 tablespoons lemon juice
o 2 tablespoons honey
o 1 teaspoon dijon mustard
o 2 cloves garlic , minced
o 1 teaspoon dried oregano
o 1 teaspoon dried dill
o 1/2 teaspoon salt
o 1/4 teaspoon freshly ground black pepper

Fresh Corn Salad

Yield: 4 to 6 servings
Ingredients
5 ears of corn, shucked
1/2 cup small-diced red onion (1 small onion)
3 tablespoons cider vinegar
3 tablespoons good olive oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup julienned fresh basil leaves
Directions
In a large pot of boiling salted water, cook the corn for 3 minutes until the starchiness is just gone. Drain and immerse it in ice water to stop the cooking and to set the color. When the corn is cool, cut the kernels off the cob, cutting close to the cob.
Toss the kernels in a large bowl with the red onions, vinegar, olive oil, salt, and pepper. Just before serving, toss in the fresh basil. Taste for seasonings and serve cold or at room temperature.
