How To make Orzo Confetti Salad
Ingredients

orzo, rice shaped pasta, uncooked
1
salt
1/3
cup
carrots, finely chopped
1
each
tomato, plum, seeded, finely chopped
1/3
cup
bell pepper, green, finely chopped
1/3
cup
celery, chopped
1/3
cup
onion, red, finely chopped
1/3
cup
parsley, fresh, minced
1
pepper, freshly ground
1
each
belgian endive, up to 2 heads, leaves separated
1
each
radicchio, up to 2 heads, leaves separated
DRESSING:
3
tablespoon
vinegar, white wine
1
teaspoon
mustard, dijon
6
tablespoon
oil, olive
Directions:
Bring a large saucepan of water to boil over high heat. Add orzo and 1 tb salt and boil for about 8 minutes,or until pasta is tender but still slightly firm. Turn orzo into a sieve, rinse under cold water to stop cooking, and drain well.
Dressing: In a small bowl, combine vinegar and mustard, then whisk in oil.
Bring small saucepan of water to boil over high heat, add carrots, and blanch for 2 minutes. Drain in a colander.
In a large bowl, combine orzo, carrots, tomato, green pepper, celery, onion and parsley. Add dressing, season with salt and pepper, and toss to combine well. Serve with endive and radicchio.

Orzo, Black Bean, and Garbanzo salad
Salads are the perfect dish because they're wholesome, quickly prepared, light and refreshing. This recipe uses a few ingredients and is easy and quick to make! This Orzo, Black Bean, and Garbanzo salad is the one I love preparing for potlucks, picnics or BBQs and I'm sure you'll love it too!

SERVES 4

Low-calorie cooking spray
4 skinless and boneless chicken breasts
2 onions, chopped
1 large carrot, peeled and finely diced
2 celery sticks, finely diced
2 red peppers, deseeded and chopped
3 garlic cloves, crushed
½ tsp dried red chilli flakes
1 tsp fennel seeds (optional)
15g fresh flat-leaf parsley, stalks finely chopped, leaves
2 x 400g can chopped tomatoes
300ml hot chicken stock
300g dried orzo pasta
Heat the oven to 220°C/fan 200°C/gas 8. Spritz a large ovenproof casserole or deep non-stick frying pan with cooking spray andput over a medium-high heat. Brown the chicken breasts all over for 3-4 minutes, then set aside on a plate.
Spray the dish again with cooking spray. Add the onion, carrot, celery and pepper to the pan and fry over a medium heat for 6-8 minutes, stirring often, until softened. Add the garlic, chilli flakes, fennel and parsley stalks, then fry for 2 minutes more until fragrant. Pour over the chopped tomatoes and add the stock. Bring to the boil, stir through the orzo and nestle the chicken breasts into the sauce.
Bake in the oven for 20-25 minutes until the chicken is cooked through and the orzo is tender.
Carefully remove from the oven, then lift out the chicken breasts and give the orzo a good stir
with most of the chopped parsley leaves. Add the chicken back to the pan and take to the table,
then scatter with the parsley leaves. Serve with salad.

What is Orzo and How to Make It | Cooking Hacks | You Can Cook That
Warm Confetti Salad
The beauty of this salad is that it is colourful and is served warm, making it the perfect salad for cold weather or as a light lunch. I have used Orzo pasta (which are shaped like rice grains) but any small pasta will work in this bright salad.
Ingredients
1 cup orzo pasta (or any small pasta)
2 tbsp. oil
juice of 1 lemon (2 tbsp.)
1/2 tsp. salt, or to taste
1/4 tsp. black pepper powder
1/4 tsp. garlic paste
1 small carrot, diced and boiled
2 tbsp. sweetcorn
1/4 cup green peas, boiled
1 small red onion, finely diced
1 cup mixed bell peppers/capsicum (I used red and green)
1 chicken breast, cubed and boiled
2 tbsp. chopped coriander
1 chopped chilli
Instructions
Boil and drain the pasta as per packet directions.
Warm up the oil, add the onions and garlic paste. fry until they sweat, then add the cubed capsicum, peas, sweetcorn, carrots, and chicken cubes. Sprinkle the salt and pepper. You can sprinkle some coriander, cumin or turmeric powder at this point if you like. Cook until the capsicum cubes soften slightly. Then add the green chilli, lemon juice and boiled pasta. Stir to combine and taste. Adjust seasoning if needed. Sprinkle the chopped coriander and turn off the heat.
You can omit the chicken if you want, or substitute it with cubed boiled egg.
Serve warm salad, although it also tastes great cold. You can drizzle some ketchup or tomato sauce over it if you like.
