Orange poppy seed cake - a simple recipe for a fragrant cake
Ingredients:
4 eggs
100 g sugar
200 g soft butter
zest of 1 orange
100 ml orange juice
270 g flour
10 g baking powder
60 g poppy
syrup:
150 ml orange juice
25 g sugar
50 ml water
for filing:
powdered sugar
Baking dish - 22 cm.
Bake the cake in a preheated oven at 170°C for approximately 40-50 minutes. Check the readiness of the cake with a wooden skewer (should be dry).
Pour syrup over hot cake and leave for 10-15 minutes.

Batter:
2 tablespoon poppy seeds
1/4 cup milk at room temperature
3 cups of cake flour
1/4 teaspoon salt
2 + 1/2 teaspoon baking powder
3/4 cup fresh orange juice
2 teaspoon vanilla extract
1 + 1/4 cup unsalted butter at room temperature
1 tablespoon orange zest
1 + 3/4 cup granulated sugar
4 eggs at room temperature
for the orange glaze:
1 cup powder sugar
1 teaspoon orange zest
3 tablespoon fresh orange juice
how to make the cake flour:
add to a bowl : 3 cups all purpose flour
remove 6 tablespoon of all purpose flour from the bowl
add 6 tablespoon cornstarch to the all purpose flour
mix
sift this twice!
once you have sifted the flour 2 times
add:
2 + 1/2 teaspoon baking powder
1/4 teaspoon salt
mix and set aside
add 3/4 cup fresh orange juice and 2 teaspoon vanilla extract to separate bowl and mix the 2 together
set aside
in a mixing bowl add:
1 + 1/4 cup unsalted butter at room temperature
1 tablespoon orange zest
mix these two for 1 minute
after 1 minute add: 1 + 3/4 cup granulated sugar
slowly add the granulated sugar to the butter with the mixer still on
keep speed of the mixer on medium speed
mix for 4 minutes
the butter and sugar mixture will be light in color and fluffy
stop to the scrape down the sides of the bowl
after 4 minutes add: 4 eggs at room temperature
add 1 egg at a time beating for 1 minute
eggs should be fully blended in with the mixture
add some of the cake flour to the bowl, milk & poppy seeds and some orange juice
mix on low speed until flour is combined
repeat this 2 more times
scrape down sides of the bowl as needed
prepare a 9 inch Bundt cake pan
grease with some butter & dust with flour
preheat the oven to 325°F
add batter to the pan and using a spoon smooth the top surface
bake for 50 to 60 minutes
allow cake to cool in the pan for 15 minutes
make the orange glaze
after 15 minutes remove cake from a pan and drizzle the orange glaze over it!
slice and serve!

Ingredients
Cake
1 cup (250 mL) milk
½ cup (115 g) unsalted butter
1 cup (165 g) cornmeal
1 cup (200 g) granulated sugar (caster sugar)
4 large eggs, at room temperature
2 tsp (10 mL) finely grated blood orange zest
1 cup (100 g) ground almonds
2 tsp (10 mL) baking powder (gluten free, if needed)
¼ tsp (1 mL) salt
pinch ground cinnamon
Syrup
½ cup (125 mL) blood orange juices (about 2 oranges)
½ cup (100 g) granulated sugar (caster sugar)
Directions
1. Preheat the oven to 350 F (180 C) and grease a 9-inch (23 cm) springform pan.
2. Heat the milk and butter until the butter has melted and pour this over the cornmeal in a large mixing bowl, whisking while adding (it will thicken up quickly.) Whisk in the sugar and add the eggs one at a time, whisking after each addition. Stir in the zest.
3. In a separate bowl, stir the ground almond with the baking powder, salt & cinnamon and add this to the batter, stirring until blended. Pour the batter into the prepared pan and bake for about 45 minutes, until a tester inserted in the centre of the cake comes out clean.
4. To make the syrup, bring the blood orange juice and sugar to a full boil. While the cake is still hot from the oven, poke holes in it with a skewer and then spoon the syrup over the cake (it will soak in quickly). Allow the cake to cool to room temperature before serving.
The cake will keep, well-wrapped, at room temperature for 3 days.

Lemon Poppy Seed Cake

Ingredients
1 cup buttermilk, shaken
1/3 cup poppy seeds (1.75 ounces)
Nonstick baking spray with flour, such as Baker's Joy
1/2 pound (2 sticks) unsalted butter, at room temperature
2 1/2 cups granulated sugar, divided
4 extra-large eggs, at room temperature
1 teaspoon pure vanilla extract
1/3 cup grated lemon zest, loosely packed (4 to 5 large lemons)
2 3/4 cups all-purpose flour
1/4 cup cornstarch
1 teaspoon kosher salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup freshly squeezed lemon juice, divided
For the glaze:
1 cup sifted confectioners' sugar
1 1/2 tablespoons freshly squeezed lemon juice
Directions
Pour the buttermilk into a 2-cup liquid measuring cup, stir in the poppy seeds, and set aside at room temperature for at least 2 hours.
Preheat the oven to 350 degrees F. Thoroughly spray the inside of a Bundt pan with the baking spray and set aside.
In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and 2 cups of the granulated sugar on medium speed for about 5 minutes, until light yellow and fluffy. With the mixer on low, add the eggs, one at a time, the vanilla, and lemon zest, scraping down the bowl with a rubber spatula.
Sift the flour, cornstarch, salt, baking powder, and baking soda into a medium bowl. Add 1/4 cup of the lemon juice to the buttermilk mixture. With the mixer on low speed, alternately add the flour mixture and buttermilk mixture in thirds, beginning and ending with the flour. Scrape the bowl with a rubber spatula to be sure the batter is well mixed. Spoon the batter into the prepared pan, smooth the top, and bake for 40 to 50 minutes, until a cake tester comes out clean.
Meanwhile, place the remaining 1/2 cup of granulated sugar and the remaining 1/2 cup of lemon juice in a small saucepan and cook over high heat until the sugar dissolves. Set aside. When the cake is done, allow it to cool in the pan for 10 minutes, then turn it out onto a baking rack set over a large plate. Spoon the warm lemon syrup slowly over the cake, allowing it to be absorbed into the cake. Set aside for at least 30 minutes to cool.
For the glaze, whisk the confectioners' sugar and lemon juice together in a small bowl, adding a little more sugar or lemon juice to make a smooth, thick, but pourable glaze. Drizzle over the cake, allowing it to drip down the sides. Transfer to a flat cake plate and serve at room temperature.
