How To make Orange Nut Bread
-JUDI M. PHELPS (BNVX05A) 1 1/2 c All pupose flour
1/4 c Sugar
2 ts Baking powder
1/2 ts Salt
1/3 c Almonds or walnuts; chopped
1/4 c Raisins; chopped
2 tb Orange peel; grated
1 Egg; beaten
1/2 c Orange juice
2 ts Vegetable oil
Combine flour, sugar, baking powder and salt in a mixing bowl. Stir in nuts, raisins, and orange peel. Combine beaten egg, orange juice and oil. Pour into flour mixture. Mix only until flour is dampened and fruits and nuts are well distributed. Turn into a greased (8 x 4-in) loaf pan. Bake in a 350 degree oven 40 minutes until cake tester comes out clean. Let cool in pan 10 min; turn out of pan and cool completely on rack. Wrap in waxed paper and store overnight before slicing. Each serving: 1 slice, about 1/2-inc thick.

INGREDIENTS
- 2 cups flour
- 1 cup sugar
- 1 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 2 tablespoons butter (softened)
- 3/4 cup orange juice
- 1 egg
- 1 1/2 cups chopped cranberries
- 3/4 cup chopped walnuts (optional)
- 1 tablespoon orange zest
DIRECTIONS
Preheat oven to 350 degrees.
Grease and flour the pans well if using traditional baking pans. I use paper pans to give away the bread as gifts!
Mix flour, sugar, salt, baking powder, and baking soda. Cut in butter, add orange juice, egg, and zest and mix, just to incorporate.
Fold in nuts and cranberries. To chop the cranberries, I use a food processor. You can also chop by hand.
Spoon into pans and bake. If using 3-4 smaller pans, bake for 30-40 minutes. If using one large pan, bake for 45-60 minutes.

Grated zest from 1 whole orange
3/4 cup (6 fl. oz / 180 ml) fresh orange juice

Today is a departure for me... going with the Home part of Harmony Hills Home and Garden. I'm baking Cranberry Orange Nut Bread today, as a Thanksgiving weekend treat.
The recipe I used was this one:
I didn't have buttermilk, so I substituted sour cream and 2% milk. I didn't have oranges so I substituted clementines. I used pecans.
It turned out delicious! Highly recommend!
