How To make Orange Nut Bread
-JUDI M. PHELPS (BNVX05A) 1 1/2 c All pupose flour
1/4 c Sugar
2 ts Baking powder
1/2 ts Salt
1/3 c Almonds or walnuts; chopped
1/4 c Raisins; chopped
2 tb Orange peel; grated
1 Egg; beaten
1/2 c Orange juice
2 ts Vegetable oil
Combine flour, sugar, baking powder and salt in a mixing bowl. Stir in nuts, raisins, and orange peel. Combine beaten egg, orange juice and oil. Pour into flour mixture. Mix only until flour is dampened and fruits and nuts are well distributed. Turn into a greased (8 x 4-in) loaf pan. Bake in a 350 degree oven 40 minutes until cake tester comes out clean. Let cool in pan 10 min; turn out of pan and cool completely on rack. Wrap in waxed paper and store overnight before slicing. Each serving: 1 slice, about 1/2-inc thick.

Baking Cranberry Orange Nut Bread - ????????????????????????
Today is a departure for me... going with the Home part of Harmony Hills Home and Garden. I'm baking Cranberry Orange Nut Bread today, as a Thanksgiving weekend treat.
The recipe I used was this one:
I didn't have buttermilk, so I substituted sour cream and 2% milk. I didn't have oranges so I substituted clementines. I used pecans.
It turned out delicious! Highly recommend!

Cranberry Orange Nut Bread ~ Gluten Free
For a Printed copy of this Recipe:
Cranberry Orange Nut Bread ~ Gluten Free
In a Large bowl mix with a wire whisk:
2 Cups Gluten Free Flour Mix (***See Foot Note***)
¾ Cups Sugar
1 tsp. Xanthan Gum
1 1/2 tsp. Baking Powder
½ tsp. Baking Soda
1 tsp. Salt
Add using a Wooden Spoon: Mix just until combined
1 egg slightly beaten with a fork
1 tsp. Orange Zest
¾ Cups Orange Juice
2 Tbl. Vegetable Oil
Using a Rubber Spatula: Gently Fold in
1 ½ -- 2 cups of Whole Fresh Cranberries (Rinse and drain in a colander,,removing any stems)
½ Cup Chopped Walnuts
Spray a 9X5 Pan with Cooking Spray
Pour the Bread Batter into the pan and spread out evenly.
Bake in a Preheated 350* Oven
for 50-55 Minutes or until Done
I use a Digital Thermometer. When it reaches and internal Temperature of 205* your bread is done.
Remove from the pan and cool on a Wire Wrack
When the Bread has completely cooled wrap in plastic wrap over night.
This helps to make a nice soft crust with a moist bread
The next morning unwrap your bread, slice and serve
This bread stays fresh for 3 days
or you can Freeze it in individual pieces wrapped in plastic wrap stored in a Zip-lock bag or container.

2 1/4 Cups Bob's Red Mill Gluten Free Brown Rice Flour
1/4 Cup Bob's Red Mill Potato Starch
2/3 Cup Bob's Red Mill Tapioca Starch
3/4 Cup Bob's Red Mill Gluten Free Sweet Rice Flour
1/3 Cup Cornstarch
Measure all the ingredients into a container. I used a spoon to lightly mix it together then put the cover on and shake well.
(Making sure its a tight fitting cover)
The original recipe called to add 2 tsp. Xanthan Gum
I did not do that, I like to add mine to each recipe individually.
Bob's Red Mill Flours:
Acu Rite Digital Thermometer
I used a digital thermometer to check the bread for when its done. Bake until 208*-210* in the center of the bread.
Its also great to check the temperature of the milk and water before adding yeast. Its a helpful gadget. My Digital Thermometer is by Acu Rite.

Orange Banana Nut Bread that YOU can make!
Everybody loves banana nut bread. Orange and Banana Nut Bread goes above and beyond with flavor. The wonderful taste of banana paired with the citrus tang of the orange is amazing.
Here is the recipe:
200g/ 1 2/3 cups all-purpose flour
113g/ 1 stick unsalted butter (soft)
128g/ 1 cup granulated sugar
4g/ 1 tsp nutmeg
2g/ 1/2 tsp salt
4g/ 1 tsp baking soda
3 bananas (ripened)
2 eggs
1 tsp orange extract
44g/ 1/2 cup orange zest
62g/ 1/4 cup fresh orange juice
64g/ 1/2 cup sour cream
64g/ 1/2 cup chopped walnuts
Bake 350 F for 70 minutes

INGREDIENTS

- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 2 tablespoons butter (softened)
- 3/4 cup orange juice
- 1 egg
- 1 1/2 cups chopped cranberries
- 3/4 cup chopped walnuts (optional)
- 1 tablespoon orange zest
DIRECTIONS
Preheat oven to 350 degrees.
Grease and flour the pans well if using traditional baking pans. I use paper pans to give away the bread as gifts!
Mix flour, sugar, salt, baking powder, and baking soda. Cut in butter, add orange juice, egg, and zest and mix, just to incorporate.
Fold in nuts and cranberries. To chop the cranberries, I use a food processor. You can also chop by hand.
Spoon into pans and bake. If using 3-4 smaller pans, bake for 30-40 minutes. If using one large pan, bake for 45-60 minutes.
