2 c Flour 1 c Sugar 1 ts Baking powder 1 ts Vanilla 3 Egg equivalent; or 3/4c egg -whites 2 tb Orange juice 1 Orange zest 1 3/4 c Dried cherries Or- currants; dried -cranberries Recipe by: FF Mailing List (Susan Hathaway) Mixture will be thick and sticky. Form into two long logs on Pam-sprayed cookie sheet. Bake for 20 minutes. Let cool 10 minutes or so. Preheat oven to 350. Mix (in processor is easiest): Slice into cookies (as thick or as thin as you like) using SHARP knife. Lay out on cookie sheet (same one ok) and bake 15 minutes per side. Let cool on rack. Will harden even more as cool. -----

Orange Almond Biscotti Tutorial
A simple, straight forward approach to learn straight dough method for making crunchy biscotti cookies.

Toasted Almond/Orange Biscotti AP Flour 12 oz. Sugar 10 oz. Butter, melted 2 oz. Eggs 3 EA (about 5.25 oz) Vanilla Extract ½ teaspoon Candied Orange Peel, minced 2 oz. Toasted Almonds, chopped 2 oz. *Straight Dough Method 1. Combine all ingredients. Mix only to combine 2. Roll into equal 2 logs. Bake 350 F for 15-17 minutes 3. Cool completely. Slice into bars. Dry out at 250F for 20-25 minutes on each side. Do not darken in color.

Biscotti with Almonds, Cranberry, & Orange
This is another winning flavor combination for biscotti, and I’m sure you will enjoy it as much as my family does. The orange zest adds so much flavor to this and is a perfect complement to the craisins. Try this recipe with walnuts or pecans instead of almonds for a different flavor variation.
Ingredients • 1 cup sugar • ½ cup neutral oil • 3 eggs • 1 teaspoon vanilla extract • 3 ¼ cups all-purpose flour • 1 tablespoon baking powder • 1 tsp kosher salt • 1 cup almonds roughly chopped • 1 cup craisins • zest from 1 large or 2 small oranges • ½ tsp orange extract
Directions 1. Preheat the oven to 375 degrees F. 2. Line cookie sheet with parchment paper. 3. Combine sugar, oil, eggs, vanilla extract, orange extract, and orange zest in a large bowl and mix until well-blended. 4. Combine flour, baking powder, and salt in a separate bowl and add to egg mixture. 5. The dough will be heavy. Mix until well combined. If necessary, use your hands to combine thoroughly. 6. Add almonds and craisins and mix into the dough. 7. Divide dough into two equal pieces. Place sheet of parchment paper on sheet pan. Form each piece into a log the length of your cookie sheet and approximately ½ inch thick. 8. Bake 25 to 30 minutes until golden brown. Carefully transfer logs to wire racks until cool enough to handle. 9. Lower oven temperature to 350 degrees F. 10. Slice each log crosswise into roughly ½ inch slices. Place slices back on the cookie sheet. 11. Bake an additional 20-30 minutes until lightly toasted. 12. Allow to cool and store in airtight container or freeze.

If you also want to make this, I used the recipe below: Cherry and Pecan Biscotti: Ingredients: 1 cup flour 1/4 cup oats 1/2 cup sugar 1/2 tsp baking powder 1/4 tsp baking soda 1 egg 3 Tbsp oil 1 Tbsp vanilla essence 1/2 cup roasted pecans 1/2 cup cherries Directions: In a bowl combine the flour, sugar, oats, baking soda, baking powder and salt. In a bowl combine the egg, oil and vanilla essence. Add the wet ingredients to the dry ingredients and mix to combine. Add the pecas and the cherries and fold that in. Place dough onto a lined baking tray, flour hand and shape dough into a long flat long. Bake at 180 degrees celsius for 30 minutes, roatating the pan halfway. Allow to cool for 10 minutes. Cut into strips, cut strips into half. Place back onto a lined baking tray and bake at 160 degrees celsius for 40 minutes, flipping the biscotti over half way through. Allow to cool completely. Enjoy!
