Ingredients:
Prepare Crust:
-Marie biscuits 180g or as required
-Makhan (Butter) melted 70g
-Orange zest ½ tbs
Prepare Candied oranges:
-Water ¾ Cup
-Sugar ½ Cup
-Orange slices as required (use firm oranges,slice thickness: 4mm)
Prepare Cheesecake:
-Olper’s Dairy Cream chilled 250ml
-Icing sugar ½ Cup
-Andon ki zardi (Egg yolks) 4
-Dahi (Yogurt) 200g
-Cream cheese 200g
-Orange juice ¾ Cup
-Lemon juice 1 tsp
-Bareek cheeni (Caster sugar) 1/3 Cup
-Orange zest 1 tbs
-Gelatin powder 1 tbs
-Water 4 tbs
-Orange food color ¼ tsp or as required
-Cherries
Directions:
Prepare Crust:
-In a chopper,add marie biscuits & process until finely crushed.
-Add melted butter,orange zest & process until well combined.
-Transfer this to 8-inch spring form pan.
-Spread evenly & press firmly to set it then refrigerate for 1 hour.
Prepare Candied oranges:
-In a frying pan add water, sugar & mix well until sugar melts.
-Add orange slices & cook slices in sugar syrup until orange peels are transparent.
-Spread on a tray & let them completely cool & reserve for garnishing.
Prepare Cheesecake:
-In a large bowl add ice cubes.
-Place another bowl in center,add cream and beat well.
-Add icing sugar & beat until stiff peaks form & set aside.
-In a bowl add egg yolks, yogurt, cream cheese, orange juice, lemon juice, caster sugar, orange zest & whisk well.
-Cook on double boiler for 16-18 minutes while whisking gently.
-Place the bowl on double boiler,whisk gently & cook on low flame for 16-18 minutes.
-In a small bowl dissolve gelatin powder in water & mix well.
-Add dissolved gelatin mixture & mix well.
-Add orange food color & mix well.
-Remove the bowl from double boiler & bring it to room temperature while whisking in between to avoid forming crust.
-Add whipped cream & fold gently with spatula until combined.
-Transfer the mixture to already crest set springform pan,tap few times,cover with cling film & freeze for 4 hours.
-Carefully remove springform pan, decorate with candied oranges slices,cherries,mint leaves & serve!

-1 hour kliya refrigerate ker lein.

-Ab Orange slices dal kar sugar syrup mein itna pakayein ka orange peels transparent ho jayein.
-Orange slices ko tray mein nikal lein,thanda ker lein aur garnishing kliya reserve ker lein.
Prepare Cheesecake:
-Aik baray bowl may ice cubes daal kar aik dusra bowl beech may rakh den.
-Cream dal kar beat karen.
-Icing sugar daal kar stiff peaks foem honay tak beat karlen aur side per rakh dein.
-Aik dusray bowl may andon ki zardi, dahi, cream cheese, orange juice, lemon juice, bareek cheeni, orange zest daal kar achi tarhan whisk karlen.
-Ab bowl ko double boiler pe rakh kar gently whisk karen or 16-18 minutes kliya paka lein.
-Aik chotay bowl may gelatin powder or pani daal kar mix karen.
-Ab dissolved gelatin powder ko bowl k mixture may daal kara chi tarah mix karen.
-Orange food color dal kar mix karen, double boiler se hata lein aur bech bech mein whisk kertay hoye room temperature pe thanda ker lein ta ka forming crust na banay.
-Whipped cream mein dal kar spatula ki madad se fold karen.
-Ab is mixture ko crest walay springform pan may dal kar few times tap karen. Cling film se cover ker lein aur freezer mein 4 hours kliye rakh den.
-Cheese cake ko carefully springform pan se nikal lein,candied orange slices,cherries aur podina sa garnish ker ke serve karein!

Ingredients
Crust
11 ounce vanilla wafers finely crushed
8 tablespoons unsalted butter melted
3 tablespoons granulated sugar
Whipped Cream
2 cups heavy cream
½ cup powdered sugar plus 1 tablespoon
½ teaspoon clear vanilla flavoring
Orange jello layer
¾ cup boiling water
3 ounces orange-flavoured jello
1 orange zest approximately 2 ½ to 3 tablespoons depending on the size of the orange
Cheesecake Layer
16 ounces cream cheese softened
¾ cup granulated sugar
½ teaspoon clear vanilla flavoring
Instructions
Crust
Generously spray a 9-inch springform pan with nonstick spray and set it aside.
In a medium-sized mixing bowl combine the finely crushed vanilla wafers, the granulated sugar, and the melted butter. Mix until all the ingredients are well incorporated. Firmly press the crust into the prepared springform pan. Place the crust into the freezer while preparing the rest of the cake.
Whipped Cream for both layers
Using either a stand mixer with a whip attachment or a large mixing bowl and a handheld mixer, combine the heavy cream, ½ teaspoon clear vanilla flavoring, and the powdered sugar. Whip the heavy cream mixture on high until stiff peaks form. Divide the whipped cream mixture evenly into 2 small mixing bowls.
Orange Jello Layer
In a small mixing bowl stir to combine the ¾ cup boiling water, orange-flavoured jello, and the orange zest. Stir until the jello has dissolved. Set aside to cool completely.
Once the jello mixture is cooled, carefully fold in the half whipped cream set aside for the jello mixture. Reserve ½ cup of the jello cream to make the center jello swirl.
Cheesecake Layer
Using a medium-size mixing bowl and a handheld mixer set on medium-high, beat the cream cheese for 1 to 1 ½ minutes. Reduce the mixer speed to low and add the granulated sugar and clear vanilla flavoring. Increase the mixer speed to medium and continue mixing until the cream cheese mixture is smooth about 1 ½ minutes. Be sure to use a spatula to scrape down the side of the bowl. Set aside.
Fold half of the whipped cream into the cheesecake mixture. Reserve ¾ cup to swirl with the orange jello layer for the center.
Creamsicle Cake Assembly
Remove the crust from the freezer. Evenly spread the cheesecake layer over the crust, leaving the ¾ cup reserved for the swirl. Set it aside.
Using a small spoon, dollop spoonfuls of the ½ cup reserved orange cream randomly on top of the cheesecake layer.
Use a fork to swirl the orange dollops into the bottom cheesecake layer.
Spread the reserved ¾ cup cheesecake on top of the orange swirls.
Evenly spread the remaining orange cream mixture over the remaining cheesecake layer. Place in the refrigerator for at least 6 hours to overnight to completely set.
Once the orange creamsicle cake is firmly set and the cake is still in the springform pan, carefully run a sharp knife along the inside of the pan. This will help the cake release from the pan.

Chocolate Orange Cheesecake
Your customers will love this rich Callebaut inspired cheesecake. With the added hint of zesty orange that will truly please their pallets.
Recipe:
Ingredients:
• 150g digestive biscuits
• 75g melted butter
• 350g Callebaut - Finest Belgian Dark Chocolate - Recipe N° 811
• 225g caster sugar
• 400g full-fat cream cheese
• Finely grated orange zest
• 400ml smooth double cream
Preparation:
1. Finely crush the biscuits in a food processor or with a rolling pin
2. Add the melted butter and mix until the mixture clumps together
3. Press into the base of a 23cm (9in) round springform tin and chill until needed
4. Melt the chocolate in a microwave, heat gradually, stirring in-between 20 second blasts
5. In a separate bowl whip the cream until it just holds its shape
6. In a separate bowl beat together the cream cheese and sugar until smooth
7. Fold in the chocolate and ¾ of the orange zest, then stir until well combined
8. Finally fold the whipped cream into the cheesecake base
9. Spoon the cheesecake mixture on top of the chilled biscuit base, level and chill until set – at least 3 hours
10. To serve, remove cheesecake from tin and transfer to a serving plate or cake stand and decorate with the remaining orange zest and chocolate sauce

상큼한 오렌지 과육이 입안에서 톡톡 터지는 오렌지 치즈케이크를 만들었어요~
오렌지 과육과 오렌지 주스를 굳혀 제일 위에 올렸는데 입체감 있게 굳은 오렌지 과육 때문에 더 먹음직스럽고 상큼해 보이는 것 같아요~
저는 색이 다른 2가지 종류의 오렌지를 사용했는데 영상에서는 두드러지지는 않지만 실제로는 살짝 다른 색감이 느껴진답니다~
오렌지는 1가지만 사용하셔도 좋아요~
보는 것 같이 맛도 정말 상큼해서 오렌지를 먹는 것 같이 싱그러웠어요~
치즈케이크에도 오렌지 주스를 넣어 오렌지 향이 은은하게 나는게 정말 좋더라구요~
시트는 반죽을 2개로 나눠 기본색과 초콜릿 색으로 구워 사용했는데 색감이 훨씬 예쁜 것 같아요~

▶재료
따뜻한 오렌지 주스 50g
젤라틴 2g
달걀 3개
설탕 75g
꿀 8g
바닐라익스트랙 2g
무염버터 25g
우유 40g
박력분 90g
오렌지 제스트
코코아파우더 5g + 따뜻한 우유 13g
크림치즈 150g
설탕 40g
바닐라익스트랙 2g
레몬즙 3g
오렌지 주스 30g
젤라틴 5g
50% 정도 휘핑한 생크림 90g
▶레시피
1. 따뜻한 오렌지 주스와 찬물에 10분 정도 불린 젤라틴을 넣고 섞은 뒤 12cm 틀에 오렌지 과육을 올리고 주스를 붓고 냉장실에서 1시간 정도 굳힌다.
2. 뜨거운 물이 담긴 냄비 위에 달걀이 담긴 볼을 올리고 설탕, 꿀, 바닐라익스트랙을 넣고 온도가 40도 정도가 될 때까지 저으며 섞는다.
3. 핸드믹서로 풍성한 아이보리색의 거품이 될 때까지 휘핑하고 박력분을 체 쳐 넣고 섞는다.
4. 녹인 무염버터, 우유가 담긴 (온도 50~60도) 볼에 오렌지 제스트를 넣고 섞고
반죽의 조금을 덜어 넣고 섞고 본반죽에 넣고 섞은 뒤 18cm 틀에 반죽의 반정도를 붓는다.
5. 남은 반죽에 코코아파우더와 우유 섞은 것을 넣고 다른 틀에 붓고 기포정리를 한 뒤 170도 예열한 오븐에서 20분 정도 굽고 식힌다.
6. 식힌 시트의 윗면과 밑면을 잘라 준비한다.
7. 크림치즈를 부드럽게 풀고 설탕, 바닐라익스트랙, 레몬즙을 넣고 섞은 뒤 오렌지 주스를 넣고 섞는다.
8. 녹인 젤라틴을 넣고 섞고 50% 정도 묽게 휘핑한 생크림을 넣고 섞는다.
9. 시트를 15cm로 자르고 15cm 틀에 초코 시트를 먼저 깔고 치즈케이크 반죽을 붓고 기본 시트를 올리고 냉장실에서 30분 정도 굳힌다.
10. 치즈케이크 반죽을 가운데 부분에 조금 바르고 12cm 틀에 굳힌 오렌지 젤리를 틀에서 꺼내 가운데 올린다.
11. 젤리와 같은 높이로 옆부분에 반죽을 채우고 평평히 한 뒤 냉장실에서 2시간 정도 굳힌다.
