Easy Chicken Enchiladas Recipe
Hey guys! In today's video, I'm sharing my favorite enchilada recipe with you. Hope you enjoy!
EDIT 12/6/2020-I’m so happy to see so many of you guys enjoying this video! I added some Chili powder to the chicken to give it a little kick and it was amazing!
I’ve also been getting comments about the flour tortillas. Yes corn tortillas are the more traditional type of tortillas used in enchilada recipes, but I prefer the flour tortillas for my recipe. If you don’t like flour tortillas you can always use corn, but please keep the unnecessary hateful comments about the tortillas to yourself. There’s more important things in life to worry about ????
Ingredients needed:
-12 to 16 oz cooked and shredded chicken breast (I used 3 large chicken breasts in the video, this was 12 oz)
-8 oz shredded Mexican blend cheese
-One 19 oz can enchilada sauce (any flavor you choose)
-10 count large tortillas (Flour OR corn)
-9x13 size baking dish
Instructions:
-Preheat oven to 375 degrees F
-Coat a thin layer of enchilada sauce onto the bottom of the baking dish
-Mix shredded chicken, half the can of enchilada sauce and half the bag of cheese (or 4 oz) together in a medium to large bowl
-Place a tortilla onto a cutting board or any flat surface and spoon 1/10 of the mixture onto one side of the tortilla
-Roll tortilla closed
-Place filled and rolled tortilla seam down into baking dish
-Repeat with the rest of the tortillas
-Pour remaining enchilada sauce onto the top of the rolled tortillas
-Sprinkle the remaining cheese (or 4 oz) onto the top of the rolled tortillas
-Bake in the oven for 15-20 minutes (until cheese is melted and bubbly, I did 20 minutes)
-Let cool for 5 minutes and enjoy!

1 # Ground Beef or Chicken
1 large onion
2 cloves garlic
7 oz can green chilies
2 beef bouillon cubes
1 tsp black pepper
1 tsp cilantro
½ tsp cumin
1 tsp chili powder
1 tsp paprika
Topping:
1 tomato
1 avocado
sour cream
shredded lettuce
12 oz shredded cheddar
Sauce:
1/4 cup butter
1/4 cup flour
1 tsp paprika
1 tsp chili powder
3 beef bouillon cubes
1 tsp cilantro
1 tsp cumin
1 tsp pepper
2 1/4 cup water
Spanish Rice:
2 tblsp butter
½ tsp paprika
½ tsp chili powder
1 cup uncooked rice
1 small onion
1 clove garlic
1 cup diced tomatoes
1 ½ cups water
½ tsp cumin
½ tsp black pepper
1 chicken bouillon
1 tsp cilantro

This red chile sauce has been one of my most requested recipes and I'm sharing with you my version of our family recipe.

This red chile sauce is so versatile, so delicious, and so easy to make. This sauce is awesome because at its base, it can be used on so many different dishes, from enchiladas to tamales to menudo and so much more. All you got to do is start with this base, and then you can tweak it in any direction, probably as many different sauces as there are chilies, and that's not even taking into account that every single house is going to do it a little bit different.
So whether you're in Texas, New Mexico, Mexico, or along the frontera or anywhere in the USA, remember my advice, what Arnie takes always says, ain't no right way, ain't no wrong way to make chili sauce, and don't let nobody tell you you can't do it the way you like it.
Maybe what your grandma taught your mom, what my grandma taught my mom and my mom taught me may not be exactly the same, even if they're similar, but of course, my grandma's is better than yours. Just kidding! Don't get mad!
Let me just cover real quickly the couple of the different chiles I have. Now, the package here says cascabel or guajillo. It doesn't mean they're the same thing because they're not, but it means you might get one or the other in this package or possibly both. We also have some ancho chile, and we also have some pasilla chile. And I also have some chile de arbol down here. We use that one in our red chili sauce just to give it a little hint of heat and a little more complex flavor.
All right, so in the recipe we're going to use 15 guajillo/cascabel chiles, a couple of ancho chiles, and probably about four or five of the chile de arbol, a whole onion, and six cloves of garlic. All right, friend, let's get started and make this amazing red chili sauce.

INGREDIENTS For CARNE GUISADA
1 1/2 lbs beef shank meat
3 to 4 Tbsp cooking oil
3 Roma tomatoes
1 small onion
3 to 4 cloves garlic minced
1/2 tsp salt
1/4 tsp pepper
1 tsp ground cumin
2 1/2 tbsp all purpose flour
3 cups water
1 Knorr beef bouillon cube
**You can substitute beef bouillon cube and water for beef stock or broth
**season and salt to your preference, adjust to your taste
**add extra water/beef broth if gravy gets too thick before meat is tender
**if gravy too thin, uncover and continue cooking until desired consistency.
**COOK TIME MAY VARY
INGREDIENTS For Mexican Rice
1 to 1 1/2 Tbsp cooking oil
1 cup long grain rice (rinsed)
1/3 small onion sliced
2 cloves garlic minced
1/2 tsp cumin seeds
1/4 tsp black peppercorns
1 Tbsp tomato chicken bouillon powder
5.5 fl oz can of V8 juice (or just use tomato sauce)
2 cups water

Ingredients
Makes 6 servings
6 flour tortillas (8 inch-20cm)
Enchilada sauce
2 tbsp (30 ml) vegetable oil
1 small onion,chopped
1 tbsp (10g) flour
2 tsp (6g) chili powder
1/2 cup (120g) tomato paste
2 cups (500ml) water
1/2 tsp (1g) ground cumin
1/2 tsp (1g) ground coriander
1/2 tsp (1g) oregano
1 tsp (5g) salt
1 lbs ground meat (beef, chicken)
2 cups shredded cheese( i use cheddar and mozarella ).
