How To make Old Fashioned Pumpkin Pie 1
3 Eggs; slightly beaten
16 oz Pumpkin; canned
2/3 c Sugar
1/2 ts Salt
1 1/4 ts Cinnamon
1/4 ts Ginger; or more
1/4 ts Cloves
1/4 ts Nutmeg
1 1/3 c Evaporated milk
1/2 c Molasses
1 lg Pie crust; partially baked
Two small pie crusts Preheat oven to 375 . Combine eggs, and pumpkin. Add sugar, salt and spices. Stir in evaporated milk. Add molasses and blend. Pour into baked pie crusts. Bake 40-45 minutes or until knife inserted 2" from edge comes out clean. Makes 2 small or 1 large pie. -----

RECIPE for filling
1 Quart (1L) Whole Milk
2 Cups (450g) Pumpkin Puree
4 eggs
½ Cup (190g) Molasses
1 ½ teaspoons allspice
2 teaspoons ginger
Pie Dough
1. Blind bake the pie crust until fully cooked.
2. Mix all of the ingredients together until smooth then add to cooled pie crust. Bake at 350°F / 175°C for 75 - 80 minutes or until there is just a slight wobble in the middle of the pie.
3. Turn off oven but leave the pie in to cool with the door slightly ajar (you can use a wooden spoon to prop it open).
4. Let cool completely before slicing. This actually tastes even better the next day!

This recipe came from a friend’s great-grandmother’s cookbook. The cookbook was 100 years old when I copied this, and that was over 30 years ago!

1 Tbsp flour
2 1/4 tsp pumpkin pie spice
1/2 tsp salt
1 1/2 cups pumpkin purée
1 1/2 cups evaporated milk
