Old Fashion Oatmeal Butterscotch Cookies
The aroma and taste of these oldies brings back childhood memories! So very easy to make and served great with a glass of milk!
Preheat oven to 375
1 cup self rising flour
1/2 tsp cinnamon
1 cup softened butter(unsalted)
3/4 cup white sugar
3/4 cup brown sugar ( I used light)
2 eggs
1 tsp vanilla
3 cups oats (old fashion or quick)
In large bowl, combine sugars, butter and vanilla. Cream mixture.
Combine cinnamon with flour
Gradually add in flour mixture and mix. Add oats and morsels. Beat together.
Drop by TBS onto ungreased cookie sheet.
Bake 8-10 mins. Depending on how crispy you want them. For a chewier texture, I bake for 8 mins. Let cool in pan about 5 mins then transfer to cooling racks.

2 eggs
1/2 tsp vanilla
1/2 Tbsp cream of tartar
1/2 Tbsp baking soda
2 3/4 cups flour
Method:
Mix in order given.
Roll into a log around 2 in diameter and wrap tightly in cling film.
Refrigerate overnight.
Preheat oven to 350ºF.
Cut rounds approximately 1/2 thick and bake for 10-11 minutes.
Unused dough can be frozen and baked at a later date.
