No editing, no fancy lighting—just straight answers.
The test cooks at America's Test Kitchen answer your cooking questions straight from the test kitchen. We bring our laptop to the kitchen, turn on the webcam, and hit record.
To ask a question, tweet us @TestKitchen or ask us on Facebook:
Due to the high volume of questions, we are not able to answer every single one. We try our best, but the test cooks have to get back to testing recipes!
America's Test Kitchen is a real 2,500 square foot test kitchen located just outside of Boston that is home to more than three dozen full-time cooks and product testers. Our mission is simple: to develop the absolute best recipes for all of your favorite foods. To do this, we test each recipe 30, 40, sometimes as many as 70 times, until we arrive at the combination of ingredients, technique, temperature, cooking time, and equipment that yields the best, most-foolproof recipe.

How to Thicken Stew, Soup, and Sauces with Roux | Chef Jean-Pierre
Hello There Friends, Today I have an important video for the future of this channel! How to Thicken any Soup, Stew or Sauce! I’m going to demonstrate the perfect technique on how I make a Roux that you can leave on the counter for months at a time! Use this Roux to help you thicken ANYTHING! Let me know what you think in the comments below!
RECIPE LINK: Clarified Butter and Flour!
Preheat oven to 250F/121C
1 cup of clarified butter
2 1/2 cups all purpose flour (always make sure to weight your flour if you decide to make more or less that 1 cup of butter)
In a sauce pan, bring it to boil and transfer it to a baking dish for 3 hours. Turn oven off and let it rest in a closed oven for a minimum of 12 hours!
You can keep at room temperature for 3 months, in the fridge at least 6 months and 17 years in the fridge ????
To use it to thicken any recipe, just add a little bit first to see how much you really need it will work almost immediately. But if the recipe has no fat it may take a few more seconds to thicken.

Slow Cooker Whole Chicken {much better than buying a rotisserie chicken!}
SLOW COOKER WHOLE CHICKEN
--------------Click on SHOW MORE to see the FULL RECIPE--------------
We love making a whole chicken in the slow cooker instead of buying a rotisserie chicken. Use the leftovers for tacos or soup the next day.
RECIPE:
INGREDIENTS:
5 lb. small whole chicken (look for a chicken that is on the smaller size around 4-5 lbs.)
1/2 cup butter
1 lemon (optional)
4 carrots - peeled and halved
1 red onion - peeled and quartered
1/2 tsp. dried thyme
1 tsp. salt
1/2 tsp. paprika
1/4 tsp. garlic powder
1/4 tsp. pepper
SLOW COOKER SIZE: 6-quart or larger
INSTRUCTIONS:
Add the carrots and onion to the bottom of the slow cooker.
Remove the chicken from its packaging. Remove any extra parts or packaging from the inside of the chicken. Drain off any liquid from the inside of the chicken.
Add the chicken on top of the vegetables.
Pour over the melted butter over the chicken.
Cut the lemon in half and squeeze over the chicken.
Sprinkle over the seasonings evenly.
Place the lid on the slow cooker.
Cook on LOW for 7-8 hours. This can vary for each chicken you cook, for they can vary in size. You know the chicken is done cooking when the drumsticks start pulling away from the breasts and the juices run clear. If you are concerned if your chicken is done, use a thermometer. 165° Fahrenheit is the safe temperature for chicken.
