How To make Oatmeal Carrot Cookies
3/4 c Butter-flavored shortening
1 1/4 c Brown sugar
1/3 c Orange juice
1 tb Orange peel; grated
1 1/2 ts Vanilla
2 c Grated carrots; about 3
-medium 2 c Quick-cooking oats; uncooked
2 c Flour
1/2 ts Baking soda
1/2 ts Salt
1/4 ts Cinnamon
1/4 ts Allspice
1/4 ts Nutmeg
1 c Golden raisins
1 c Walnuts; coarsely chopped
***frosting*** 3 oz Cream cheese; softened
2 tb Shortening
1 1/2 c Powdered sugar
1 ts Milk
1/2 ts Orange extract; optional
Recipe by: Sue Klapper To make cookies: Preheat oven to 375~. Grease baking sheets with shortening. In large mixer bowl, combine shortening, sugar, egg, juice, peel and vanilla. Beat at medium speed of electric mixer until well-blended. Beat in carrots. In another bowl, combine oats, flour, baking soda, salt, cinnamon, allspice and nutmeg. Mix into creamed mixture at low speed just until blended. Stir in raisins and nuts. Drop rounded tablespoonfuls of dough 2 inches apart onto prepared baking sheet. Bake 10 to 12 minutes, or until lightly browned. Do not overbake. Cool 2 minutes on baking sheet. Remove cookies to foil to cool completely. To make frosting: In large bowl, combine cream cheese, shortening, powdered sugar, milk and extract. Beat at medium speed until well-blended. Frost cooled cookies. Source: Milwaukee Sentinel. -----

Carrot recipes in general benefit a lot when you incorporate some cinnamon. And to achieve that soft texture, we also added some sour cream to this already amazing carrot cookie recipe. These healthy cookies are so simple and yet very nutritious and full of flavour. Use this easy cookie recipe any time of the year, they are so versatile. They can be served as delicious healthy breakfast cookies too. Two superfood ingredients were used to make this healthy cookie recipe work each and every time.

Ingredients:
125 g / 0.27 lbs carrots
100 g / 0.22 lbs instant rolled oats
1 egg
20 g / 0.04 lbs sugar
80 g / 0.17 lbs 20% M.F. sour cream
A pinch of salt
1/2 tsp baking powder
Ground cinnamon (to taste)
Bake in a preheated oven at 180°C (350°F) for 25-30 minutes. Note that baking time may vary depending on the oven being used.

Great taste from simple ingredients! Light dessert for breakfast in 5 minutes! The recipe is simple and quick, but very tasty. Easy dessert recipe in 5 minutes. All I can say is that it was over very quickly, and I will definitely do it again soon.

Ingredients:
80 g rolled oats/ 1 cup
pinch of salt
10 g coconut flour(or oat flour) / 1 1/4 tbsp
5 g baking powder / 1 tsp
1/2 teaspoon cinnamon
2 medium eggs
35 g sweetener(stevia/or your choice) / 2 3/4 tbsp
15 g melted butter(or coconut oil) / 1 tbsp
1 apple
1 medium carrot
30 g chopped walnuts / 4 tbsp
18 x 13 cm / 7 x 5 inches baking tray
decorate with nuts
bake 35 minutes at 180°C/ 360°F

Just how easy is this healthy oatmeal cookie recipe? Well for starters, you don’t need a stand mixer or electric mixer! You just need a whisk and a fork. And you probably have most of the ingredients in your pantry already!
While we bake these healthy cookies, you’ll learn how to make sure your oatmeal cookies turn out chewy (not cakey!) and why fresh carrots are the key to making great cookies. You’ll also learn how to make sure your cookies spread while baking, as well as how to make perfectly round cookies. (Hint: No special equipment needed!)
I shared these cookies with my neighbors, and their two-year-old immediately grabbed one and gave me a huge hug! So… These healthy cookies are definitely kid-friendly! And they’re treats you can feel good about indulging in because they contain no refined flour or sugar!

Simple and easy CARROT COOKIES. These carrot cookies are a family favorite cookie recipe that we enjoy any time of the year but they especially make for a perfect Easter / Springtime treat.
Ingredients:
1.5 cup old-fashioned oats
1 cup all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
1/2 cup butter that has been melted and cooled
1/4 cup granulated sugar
1/2 cup packed brown sugar
1/2 teaspoon pure vanilla extract
1 large egg
1 cup shredded carrots
