This Hot Milk Cake with Broiled Coconut Frosting — also known as a Lazy Daisy Cake — is a super moist vanilla cake covered in a crunchy, toasted coconut topping. It’s one of my favorite cakes of all time! Includes a step by step recipe video.
Our Favorite Oatmeal Cake
There are many variations of oatmeal cake out there, but this is our favorite. In fact, we think it’s the best oatmeal cake in the world.
INGREDIENTS
1 cup quick oats (250 ml)
1 1/2 cup boiling water (375 ml)
1/2 cup butter (125 ml)
1 cup brown sugar, packed (250 ml)
1 cup white sugar (250 ml)
1 tsp vanilla (5 ml)
2 eggs
1 1/2 cup flour (375 ml)
1 tsp baking powder (5 ml)
1 tsp baking soda (5 ml)
1 tsp cinnamon (5 ml)
1 tsp salt (5 ml)
6 Tbsp butter, melted (90 ml)
1/2 cup brown sugar, packed (125 ml)
1 tsp vanilla (5 ml)
1/4 cup milk (60 ml)
1 cup sweetened shredded coconut (250 ml)

Oatmeal Cake with Broiled Coconut Topping Recipe ~ Noreen's Kitchen
Greetings! I want to share with you my family's special recipe for oatmeal cake with a broiled coconut topping. I affectionately call it Funeral Cake because my mom only ever made it when she needed to take something to a funeral. I had to laugh because I took it to her house for Thanksgiving dinner and she said that she had just made one to send to a funeral! How funny!
This cake is super moist and delicious. It is made with simple ingredients that you will have on hand and even in your food storage. Oatmeal, eggs, butter, flour, sugar, brown sugar, nuts, coconut and evaporated milk. It is simply delicious.
I make mine with double the topping. Mom says it's too much. I disagree! This is wonderful the day you make it or the next, but in my house this disappears fast so you better get you some or it will be gone!
This cake would be great for any occasion. Potlucks, office parties, get together's and of course funerals! You could make this and cut it into bars and divide it up on pretty plates, wrapped with cellophane and have a couple really nice neighbor gifts for Christmas!

Ingredients:
For Cake:
2 eggs
1 cup Caster Sugar (200grams)
1 teaspoon vanilla extract
1 cup all-purpose flour (130grams)
1 teaspoon baking powder
1/2 cup milk (120ml)
1 tablespoon butter (14grams)
For broiled coconut frosting:
3 tablespoons butter (42 grams)
1/3 cup light brown sugar (65 grams)
1/4 cup cream (60ml)
1/2 teaspoon vanilla extract
1/2 cup dried shredded coconut (50grams)
8 square baking pan
Pre-heat and bake at 180ºC

Lazy Daisy Cake
Flour - 1 cup
Baking powder - 1 tsp
Salt - 1/8 tsp ( half of 1/4 tsp)
Sugar - 3/4 cup
Eggs - 2
Vanilla - 1 tsp
Milk - 1/2 cup
Unsalted butter - 1 tbsp
For the topping:
Brown sugar - 1/2 cup
Heavy cream - 1/4 cup
Unsalted butter - 3 tbsp
Coconut shredded - 1 cup
Vanilla - 1/2 tsp
To a saucepan, add milk and butter. Keep on stirring until it boils. Keep aside covered. In a bowl add eggs and sugar. Once the sugar gets fully dissolved, add vanilla essence. Beat with an electric beater till fluffy. Sift the flour, baking powder and salt. Add the flour in batches to the egg mixture. Fold in the batter. Now add the hot milk and mix well. Pour the cake batter into a 6 square cake tin lined with aluminium foil. Tap to avoid air trapped in. Bake in a preheated oven at 180°c for 25 minutes. After 25 minutes check with a toothpick whether the cake is done.
In a saucepan, melt butter. Add brown sugar and heavy cream. Heat on a low flame. Stir till dissolved. When it starts to bubble, add the coconut and mix well. When the mixture boils turn off the flame. Add Vanilla essence. Pour the hot mixture over the cake. Broil the cake for 2-3 minutes. Let it rest for one hour for cooling. Cut into pieces and serve.
