1/2 cup butter or margarine
softened
1/2 cup sugar
2 eggs
1 cup ripe bananas :
mashed
3/4 cup honey
1 1/2 cups all-purpose flour
1 cup quick-cooking oats
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
In a mixing bowl, cram butter and sugar. Add eggs, bananas and honey; mix well. Combine dry ingredients; stir into creamed mixture just until moistened. Fill paper-lined muffin cups two-thirds full. Bake at 350 degrees for 18-20 minutes or until cupcakes test done. Cool in pan 10

-3/4 Tsp Baking Powder
-1/4 Tsp Baking Soda
-1/4 Tsp Salt
Wet
-1-2 Ripe Bananas (100G-200G)
-2 Tbsp / 30mL Vegetable Oil
-2Tbsp / 30G Melted Unsalted Butter
-1/4 Cup / 50G Brown Sugar
-1/4 Cup / 50G Sugar
-2 Tbsp / 30mL Buttermilk (Room Temperature)
-1/2 Tbsp Vanilla Extract
-1 Large Egg
Topping
-2 Tbsp / 25G Sugar
Bake 425F / 218C for 8 mins then reduce heat to 350F / 175C for 6-8 Mins or golden brown.

Egg - 1 ( L )
Milk - 150 ml
Vanilla extract - ½ tsp
Honey - 2 tbsp
Cinnamon powder - ¼ tsp
Rolled oats - 1 ½ cup (120 g)
Baking powder - 1 tsp (4 g)
Salt - ¼ tsp
Made 6 muffins
Bake in preheated oven (170°C) for 20 - 25 mins

- 130g (1 1/2 cup) rolled oats
- 177ml (3/4 cup) milk
- 1 egg
- 1 1/2 ripe bananas
- 1 tsp baking powder
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon powder
- 1/4 tsp salt
- 3 tbsp sugar
- semi-sweet chocolate chips(optional)

2 cups whole wheat flour or all-purpose gluten-free flour
1/4 cup old-fashioned oats plus more for sprinkling on top
1 teaspoon baking soda
1/2 teaspoon cinnamon optional
1/2 teaspoon salt
1 cup packed mashed ripe bananas about 2-3 large bananas
2 eggs
1/2 cup honey or maple syrup
1/3 cup olive oil
1/4 cup milk
1 teaspoon vanilla extract

Preheat oven to 350 degrees F. Grease muffin tin with butter or cooking spray or line with liners. Set aside.
In a large bowl, combine the flour, oats, baking soda, cinnamon, and salt. Set aside.
In another large bowl, beat the mashed bananas, eggs, honey, olive oil, milk, and vanilla. Add the dry ingredients and mix until fully combined. Do not over-mix. You can add chocolate chip cookies or nuts at this point if desired.
Divide the mixture evenly into 12 muffin cups. Sprinkle with rolled oats and cinnamon if desired. Bake muffins for 20 to 25 minutes, or until a toothpick inserted into a muffin comes out clean.
