• 1/2 cup raisins
• 1/2 cup golden raisins
• 1 cup hot water
• 3/4 cup (170 grams) unsalted butter, room temperature (1 1/2 sticks)
• 1 cup (200 grams) packed light brown sugar
• 1 large egg
• 1 1/2 teaspoons vanilla extract
• 3/4 cup (100 grams) all purpose flour
• 1/2 teaspoon baking soda
• 1/2 teaspoon fine sea salt
• 1/2 teaspoon ground cinnamon
• 1/8 teaspoon fresh ground nutmeg
• 3 cups (270 grams) old-fashioned rolled oats

Cranberry Oatmeal Cookies
Wholesome and delicious cookies that are easy to make. The cranberry adds a tangy sweetness to the cookies. Yields 24 cookies.
Ingredients
1/2cup Cooking Oil
1/4 cup Butter
1/2cup White Sugar
1/2cup Brown Sugar
2 Eggs
2 tsp Vanilla Extract
1 cup All Purpose Flour
1 tsp Baking Soda
1/4 tsp Salt
2-3/4cups Rolled Oats
1 cup Dried Cranberries
Direction
-combine butter, cooking oil, and sugar in a mixing bowl until creamy
-add eggs and vanilla extract, continue to whisk
-mix dry ingredients except cranberry in another bowl and add to the wet mixture
-using a round table spoon, place cookies on parchment lined cookie sheet two inches apart
-bake 350°F for 10-12 minutes or until golden brown
-remove from oven and place on cooling rack

INGREDIENTS (make 1.5 dozens/ 18 pcs)
Dry ingredients:
1 cups (138 g) all-purpose flour
1/2 teaspoon (2 g) baking powder
1/2 teaspoon (3 g) baking soda
1/4 teaspoon (2 g) salt
1/2 teaspoon (2 g) ground cinnamon
1/4 teaspoon (1 g) ground ginger
1/8 teaspoon (just a pinch) ground cloves
1.25 cups (115 g) rolled oats (Quaker Old Fashioned)
1/2 cup (70 g) sweetened dried cranberry
1/2 cup (70 g) raisins
1/2 cup (113 g) unsalted butter (room temperature soft)
1/3 cup (65 g) sugar
1/2 cup (92 g) light brown sugar
1 large egg (55 g), room temperature
1 teaspoon vanilla extract
Bake in a preheated oven at 350°F (175°C) for 12 min
(**Don’t forget to preheat the oven. You just need to bake for about 12 minutes until golden brown on the edges but still pale in the center. Don’t overbake.)
INSTRUCTIONS:
1. Preheat oven at 350°F (175°C).
2. In a bowl, combine all the dry ingredients (flour, baking powder, baking soda, salt, ground cinnamon, ground ginger, ground cloves) and set aside.
3. Combine the oats, raisin and cranberry together.
4. With an electric mixer or a whisk, cream the butter. Add sugar and brown sugar, and beat well until the mixture is combined, for about 2-3 minutes, stopping to scrape the sides of the bowl, if needed.
5. Add the egg and continue to mix till combined.
6. Add vanilla extract and stir.
7. Reduce the mixer to low speed, add the flour mixture and mix until combined.
8. Add the oat mixture and mix until combined.
9. Scoop about 1.5 tablespoons of cookie dough on baking sheets lined with parchment paper about 2-3 inches apart.
10. Bake in a preheated oven at 350°F (175°C) for 12 minutes. Don’t overbake. Bake until golden brown on the edges but still pale in the center. Remove from oven and let it cool on baking sheet for a few minutes. Cookies will shrink down a bit.
11. Transfer to a wire rack and let it cool completely.
12. Cookies can be stored in an airtight container at room temperature for a few days, depending on your weather.
