How To make Oatcakes(Bakestone Recipes)
4 oz Medium oatmeal*
1/2 t Salt
1 pn Bicarbonate of soda
2 T Melted bacon fat**
2 fl Hot water***
*Grinding down regular rolled oats slightly in a blender or grinder will be a help. **Or beef dripping. ***Approximately.
Mix the oatmeal, salt and soda in a bowl. Make a well in the center. Pour in the melted fat and add enough water to make a stiff dough which can be squeezed into a ball. Sprinkle the board and your hands with oatmeal and knead the mixture until there are no cracks in it. Flatten the ball and roll it out into a round just under 1/4 inch thick. Invert a plate on top and trim off the ragged edges :
these can be added to the next batch of dough to be rolled. Cut the round into quarters, lift them onto a warmed and greased bakestone and cook over moderate heat for 20 minutes or until the triangles curl at the corners. Turn and cook the other side for 5 minutes, or finish under a moderate grill. Store the oatcakes in an airtight tin, and toast under a moderate grill, or in the oven, before serving. -- These are served with honey, marmalade or jam for breakfast, or with crowdie (a slightly sweet Highland Scots cottage cheese) for tea. They are especially good with fried herring or smoked haddock. Not to mention any kind of caviar you can get your hands on.

웰시 케익. Welsh Cakes recipe.
Welsh cakes also known as Griddle cakes or Bakestone cakes are a simple to make cake, eaten at tea time and are originally from Wales. (웰시 케익은 핫케이크 또는 구운 돌 이라고 불림) In today’s video I will show you how easy Welsh cakes are to make and what ingredients to use when making traditional welsh cakes. If you have never eaten them before they are similar to a scone and a biscuit and they just melt in your mouth. (입속에서 녹아 퍼지는) They are both delicious and flaky and the best part you don’t need an oven they can be cooked on your stove top. (오븐이 필요없이 가스버너로 조리 가능) They taste best when warm and served plain or you could put some butter on them. Unlike the scone they are not usually served with cream or jam. At Christmas I might change the ingredients and use cranberries with White chocolate chips, these also taste good with dark chocolate chips inside!
Ingredients
225g Flour ( sieve your flour)
100g Butter ( lard is used in traditional recipes)
30g sugar
A pinch of Salt
½ tsp of Baking powder
½ tsp of allspice ( Mace is traditionally used but you could also use cinnamon or nutmeg)
1egg & 2tbs Milk
60-70g Currants (raisins/sultanas)

SUMMARY
=======
Oatmeal is made of hulled oat grains – groats – that have either been milled (ground), steel-cut, or rolled. Ground oats are also called white oats. Steel-cut oats are known as coarse oatmeal or Irish oatmeal or pinhead oats. Rolled oats can be either thick or thin, and may be old-fashioned, or quick, or instant. The term oatmeal is also used in the U.S. and parts of Canada as another word for an oat-based porridge popular in such countries made from either ground, steel-cut, or rolled oats.
