How To make North Carolina Hush Puppies
1 c Corn meal
1/4 ts Soda
1 tb Flour
1/4 ts Salt
1 t Sugar
1/2 c Buttermilk
*note
1/4 c Water
1 Egg :
beaten
Mix all dry ingredients together. Then add egg, buttermilk, and water. Drop by spoonful into hot deep fat. Fry to a golden brown. (If a deep pot is used, the hushpuppy will float to the top when done). *NOTE: If you don't want to buy buttermilk, substitute 1/2 c. milk with 1 T. lemon juice added. Stir and let it sit for 5 minutes. It works just as well. Please note: You can make variations of this recipe in several ways: i.e., 1/4 c. finely chopped onion, less sugar, etc. But, at the coast of NC the above type recipe is usually served. ????????INGREDIENTS
1. Deep Fryer ( Can use a pot
With enough Canola Oil to cover hush puppies) I recommend using a oil thermometer if using a pot.
2. 1 3/4cup of Martha White's Buttermilk Cornmeal
3. 1/2 cup of White Lily's self-rising flour sifted
4. 1/2 teaspoon of salt
5. 2 teaspoons of sugar
6. 2 Eggs slightly beaten
7. 1 cup of buttermilk
8. 2 Tablespoons of melted Bacon Grease.
9. 1 Small diced sweet Vidalia onion
????????DIRECTIONS
1. If you're using a deep fryer go ahead and get it heating up ahead of time. You need your deep fryer on 350°if you're using a pot you will need the same temperature.
2. Dice up your small onion
Set aside.
3. In a Lg bowl add your cornmeal, and your sifted flour and salt and mix until combined.
4. In a small separate bowl add your eggs just slightly beat them.
5. Now add your buttermilk and bacon grease and your diced onion. Mix until just combined.
6. Now add your wet ingredients to your dry ingredients and mix all together until it's all combined.
7. Now using a cookie scooper if you have one start dropping
Your hush puppy mixture into your deep fryer. If your deep fryer comes with the basket lower the basket into the oil first then drop your hush puppy mixture into it that way you don't have a mess in your basket.
8. Now let them cook and turn over when ready let them get golden brown. And cook for about 4-5mins.
9. When done pull your basket up let drain and transfer hush puppies over to a paper towel.

Hey y'all! Let’s make some good old fashioned Homemade Southern Hush Puppies:
Before we know it, fish fry season will be here. You certainly cannot have a fish fry without Homemade Southern Hush Puppies. So what is a hush puppy? Hush puppies are very similar to cornbread. They're made of cornmeal, flour, and a few other ingredients. Hush puppies are usually deep fried until they are crispy and golden brown.
Here is how I like to make Homemade Southern Hush Puppies. To start, combine the cornmeal, self rising flour, sugar, salt, cayenne pepper, and garlic in a large bowl. Whisk until everything is lump free then toss in the diced onions. Add in the buttermilk (or substitution), and egg. Mix the ingredients until well combined, but don't over mix. Pour the oil into a large pan, and heat the oil over medium heat. Once the oil is nice and hot, start spooning in the batter. Fry the hush puppies until they are nice and golden brown- they will float to the top. Remove the hush puppies from the oil, and place them on a paper towel lined plate. Serve and enjoy!

2:18 - Drain on a paper towel.
2:28 - Dish out.
2:33 - Garnish with a lemon wedge.

Breakfast Casserole
1 pound venison sausage, cooked, drained
3 cups milk, divided
1 cup House-Autry Mills Onion-Hushpuppy Mix
2 tablespoons sour cream
1 ¼ teaspoon dry mustard, divided
6 eggs, beaten
1 cup shredded sharp cheddar cheese
1 teaspoon salt
½ teaspoon black pepper
Preheat oven to 350 degrees. Lightly grease the bottom of a 9 x 13 inch baking dish.
Distribute the cooked sausage evenly in bottom of dish. In a large mixing cup, mix House-Autry Onion Hushpuppy mix, 1 cup milk, sour cream and ¼ teaspoon dry mustard.
In a separate bowl, combine eggs, cheese, 2 cups milk, salt, 1 teaspoon dry mustard and pepper; stir well.
Pour egg mixture on top of sausage. Pour hushpuppy mixture evenly over casserole.
Bake for 40-45 minutes or until eggs mixture is set. Serves 6
