8 cups 2 cups chopped cooked chicken, turkey, ham or 2 cans drained tuna 1 1/2 cups cottage cheese 1 2 oz. jar pimiento :
draned, chopped 1 cup shredded Cheddar cheese Cook noodles according to package directions. Drain. Add margarine, celery salt and pepper. Toss lightly. In large bowl combine noodles, spinach, meat, mushrooms, cottage cheese, pimiento and Cheddar cheese. Spoon into 3 qt. casserole. Bake for 30-35 mins. at 350 F. Stir 2-3 times while cooking so spinach doesn't dry out.=20

Sausage Potato Skillet with Cheese Sauce
I fried the potatoes separate from the brats just for the sake of the video, but really you can fry both at the same time in your skillet, then add the peppers at the end of cooking.
What you'll need:
3 brats, casings removed and cut in to bite-sized pieces 3 russet potatoes, peeled and cut in to bite-sized pieces 4 - 5 mini-sweet peppers, seeded and sliced thin 4-5 Tbsn Pimento cheese spread Milk Salt and Pepper Old Bay seasoning Oil and butter for frying
Fry the potatoes in oil and butter. When done, remove from skillet. Fry the brats. When done, add the potatoes to the brats. Add the peppers. salt, pepper and Old Bay to taste. Fry just a couple minutes to heat everything through, then pour into a casserole dish. In a bowl, combine the Pimento cheese spread and just enough milk to make a sauce. Heat in the microwave about one minute, then stir good. Pour the sauce over the brat mix.
Tip: Use one brat and one potato per person you'll be serving. Also, the brats will fry faster if you ground them instead of making them in to pieces, like I did. Either way, just be sure to remove the casings.

Cook the meats all in one day and then divide in to resealable storage bags based on the meals you want to prepare for the next week or two. Freeze what you don't plan on using within the next couple days. This not only saves money, it saves time!
