The Aussie Classic Sponge Cake Recipe | Aussie girl can cook
Not like shop sponge cakes. the most popular sponge cake in Australia in the 70s and 80s. really easy to make. recipe written below. serves 6 to 8
pre heat oven 180 degrees C
2 x 20 cm round springform tins lined with paper
sift
2/3 cup plain flour
1/3 cup cornflour
1 tea spoon baking powder
then sift again set aside
4 eggs in a medium bowl beat for 8 mins
add
3/4 cup caster sugar couple of table spoons at a time
then fold sifted flours into egg mixture
pour into 2 tins
bake aprox 18 mins til cake leaves side of tin and no fingerprints
remove from tin straight away
same with second one
allow to completely cool
filling
1 cup cream beaten til thick
2 table spoons passionfruit pulp = 2 passionfruit
put top cake on
icing
1 cup icing sugar
1 tea spoon butter or marg
2 table spoons passionfruit pulp
mix well
keep adding icing sugar til right texture
cover top
fridge for 30 mins to set
store in fridge covered
serves 6 to 8

How to Make Shrewsbury Biscuits / Shrewsbury Recipe
These Shrewsbury biscuits use very basic ingredients but are super yummy - much better than the store-bought versions! Full shrewsbury biscuit recipe written below.

New Zealand Shrewsbury Biscuit Recipe :
In a pan, heat 1.5 cups of jam for about 10 minutes, then leave to cool
In a bowl, add 150g of melted Butter (or table spread)
3/4 of a cup of sugar
Mix together, then add:
1 Teaspoon of Vanilla Essence
1 Egg
Mix together again, then sieve in:
2& 1/4 Cups of Plain Flour
1 Teaspoon of Baking Powder
Gently mix everything together with a spatula until smooth.
Roll between sheets of baking paper to about 4-5mm thick and refrigerate for 30 minutes.
Punch the dough into circles, making small holes in half of them (to go on the top), then bake at 180oC for about 10 minutes or until they just start browning around the edges.
When cooled, blob some jam on the bottom half and sandwich with the top half (with a hole in it) and leave to set ... then enjoy!

Christmas Cake - A traditional rich fruit cake everyone will love. #christmascakerecipe #xmascake
Welcome to Geojaklin.
Christmas is a special time of year and this cake needs to be made about 2-3 months in advance. You will need a 24cm round Cake tin double lined with greased Baking Paper. When it’s made, and after the cake has totally cooled, remove it from the tin but leave the baking paper intact on sides and bottom. Wrap the cake in Aluminium foil and store it in a cool dry place until you are ready to coat it in marzipan and icing (see in a video to be completed later). About twice a month until it’s to be used, carefully open the foil and spoon over 1-2 Tbsp Brandy to feed the cake.
Ingredients:
375 Gr Currants
275 Gr Raisins
275 Sultanas
300 Gr Glace Cherries
150 Gr Dried ready to eat Apricots halved
75 Gr Mixed Candied Peel
60 Ml Brandy
300 Gr Plain Flour
300 Gr unslted butter
300 Gr Dark Muscovado Sugar
5 Eggs
1 Tbsp Black Treacle
60 Gr Whole Almonds chopped.
Zest of 1 Orange
Zest of 1 Lemon

You guys absolutely loved my island jelly cake tutorial, so I was really excited to try out another jelly cake with a different theme! The flowers on this cake are created using Russian piping tips, and then an outside layer of jelly is added to give it a showstopping effect! Personally, I actually preferred the cake in terms of aesthetics without the jelly, but I still love this version too! My jelly was a little on the thick side, so just use a smaller cake ring (or a larger cake) for a thinner layer of jelly. Jelly recipe below. Enjoy! :)
