How To make Navajo Green Chili
3 pounds pork shoulder
trimmed of fat
2 cups stewed tomatos
3 tablespoons bacon grease
1 6 oz. can tomato paste
1/3 cup flour
3 cups water
3 medium onions :
chopped
2 1/2 teaspoons salt
4 cloves garlic -- minced
1/2 teaspoon dried oregano
2 16 oz cans whole green chiles
Melt bacon grease in a skillet over med-high heat. Put flour into a paper bag a nd shake the meat with the flour to coat meat. Add the meat to the bacon grease a little at a time and brown well & evenly. Remove the meat to a 5 qt. Dutch o ven. Add the onions & garlic to the skillet and saute until transluscent. Add t hese to the pork in the pot. Stir in the remaining ingredients, bring pot to a boil, and keep stirring every 2-3 minutes. When boiling lower heat to low & sim mer for 45 minutes. Taste, adjust seasonings as per personal taste, & cook for 30 mins. more.

HATCH CHILE: 2021 Harvest in Hatch, New Mexico/Chile Capital of the World/Red or Green/Ristra Making
If you've been following @marcyinspired1442, you know that many of my recipes include Hatch chile. That's because I'm a native New Mexican and chile is a staple in our diets. Depending on where you live, you may have seen the label, Hatch chile. Hatch is a tiny farming community in southern New Mexico, about 40 miles northwest of Las Cruces, that is known for having the most flavorful chile. In fact, it's called the Chile Capital of the World. Tens of thousands of people make an annual journey to Hatch during the months of August and September because that's peak harvest season. That's when they load up on enough Hatch chile to get them through the year. You can buy it in 40 pound sacks and have it roasted and even peeled on the spot. After that, you just freeze it and use it throughout the year in all your favorite dishes. In this video I take you along as I get my fix.

Now chili is a really complex recipe, there are a billion and one ways to make it and this is just ONE way, and the key to an award winning chili at home is to make it your own. That’s the key to any award winning recipe.
In this recipe we’re using
3 ½ lbs ground beef
½ onion
3 garlic cloves
4 tbs chili powder 3 Fiesta / 1 Gephart
2 tsp smoked paprika
¼ cup tomato paste
1 bell pepper
2 tsp cumin
½ tsp oregano
1 tsp cayenne pepper
1 TBS OG - add to taste at end
1 TBS WOW -add to taste at the end
3 Roma tomatoes
We’re also adding
Mirepiox
(thats ½ chopped onion, ¼ cup chopped carrots, ¼ cup chopped celery)
2 TSP Better than Bouillon or use beef broth in place of water
2 TBS masarina or flour to thicken if necessary or desired
Condiments at my house
Onions
cheese
Salsa verde to taste
Chili piquin to taste
Habanero to taste
Beans of your choice, yes i said beans haha
Now here is the biggest pro tip that the chili champs use – brown your meat over high heat before adding it to the dish. This will take your recipe to a whole other level of flavor nirvana.
