How To make Natural Bran Muffins
1 c Boiling water
3 c Raw bran
3 ea Egg whites
3/4 c Sugar or less
2 c Non-fat buttermilk
1/3 c Canola oil
1/2 c Raisins or dates
1 1/2 c Whole wheat flour
1 c Unbleached white flour
2 1/2 ts Baking soda
Preheat the oven to 375 degrees. Mix raw bran and boiling water in a large bowl and set aside. Combine egg whites, sugar, buttermilk, oil and dried fruit in a medium bowl. Add to bran in the large bowl. In a medium bowl, mix the flours and baking soda. Add to bran mixture and mix until just blended. Spoon into lightly oiled or paper lined muffin tins. Bake for 15-20 minutes. Batter can be kept in refrigerator in a
covered jar for several weeks and baked as needed. Makes 30 muffins. ~

Chunky Banana Bran Muffins

Ingredients
1 cup unprocessed wheat bran
1 cup buttermilk (shaken)
4 tablespoons unsalted butter, at room temperature
1/4 cup light brown sugar, lightly packed
2 extra-large eggs, at room temperature
6 tablespoons unsulphured molasses
1 teaspoon grated orange zest
1/2 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup raisins
1 cup large-diced bananas
1/2 cup chopped walnuts
Directions
Preheat the oven to 350 degrees F. Place paper liners into 1 (10 or 12-cup) muffin tin.
Combine the bran and buttermilk and set aside. Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, until light and fluffy. With the mixer on low, add the eggs, 1 at a time. Scrape the bowl and then add the molasses, orange zest, and vanilla. (The mixture will look curdled.) Add the bran/buttermilk mixture and combine.
In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low speed, slowly add the flour mixture to the batter just until combined. Don't overmix it! Fold in the raisins, bananas and walnuts with a rubber spatula.
With an ice cream scoop or large spoon, fill the muffin cups to the top and bake for 25 to 30 minutes, until a cake tester comes out clean.

INGREDIENTS
1 ⅔ cups (250 g) all-purpose flour
¾ cup (75 g) oat bran
¾ cup (50 g) wheat bran
1 Tbsp (9 g) baking powder
1 tsp (5 g) baking soda
½ tsp (1.5 g) ground cinnamon
¼ tsp (0.75 g) ground nutmeg
1 cup (250 mL) applesauce
½ cup (125 mL) maple syrup
¼ cup (60 mL) vegetable oil
2 large eggs
1 cup (150 g) raisins
DIRECTIONS
1. Preheat the oven to 375 ºF (190 ºC). Line mini muffin tins with paper liners.
2. In a large mixing bowl, stir together the flour, oat bran, wheat bran, baking powder, baking soda, cinnamon and nutmeg.
3. In a separate bowl, whisk together the applesauce, maple syrup, oil and eggs. Add this to the flour mixture and stir until evenly blended. Stir in the raisins. Scoop or spoon the batter into the prepared mini muffin tins and bake for about 12-14 minutes, until a tester inserted in the centre comes out clean. Cool the muffins in the tin for 10 minutes, then turn them out to cool completely.

Healthy Muffins Recipe | How To Make Low Fat Banana Bran Muffins

Frozen Greek Yogurt Brittle:
Instructions and macros:
In a medium sized bowl add 1 3/4 cup (100g) wheat bran
1/2 Cup (40g) oats
1 1/2 Tbsp (18g) sugar substitute
1/2 Tbsp (5g) ground cinnamon
1 Tsp baking powder
Pinch of salt
Combine and set aside
In a separate bowl get together your wet ingredients
2 mashed bananas
1/2 Cup (122g) unsweetened applesauce
1/2 Cup (113g) non-fat greek yogurt
1 Egg & 2 egg whites
1 Tsp of vanilla extract
Mix thoroughly
Pour wet into the dry and combine
Pour batter into a well greased muffin tin and fill the tins to the top
You should end up with about 7 muffins
Bake at 350 degrees | 177 Celsius for 45-50 minutes
Macros: 133 Calories, 1.5g Fat, 25g Carbs (7.5g fiber), 6.5g Protein
