How To make Nasi Goreng (Indonesian Fried Rice)
2 c Long-grain rice
4 c Chicken stock or water
1 tb Cooking oil
1 md Onion; peeled and chopped
1 Celery stalk; chopped
2 Garlic cloves
peeled and chopped 1/2 ts Grated fresh ginger
1 tb Sambal oelek*
1 ts Java curry
1 tb Kecap manis**
2 Green peppers; chopped
1 c Shredded cabbage
6 lg Fresh shrimp (opt'l.)

peeled and deveined -- cut in quarters 1 c Diced, cooked chicken or
-ham or pork or lamb Salt; to taste *Hot pepper sauce. **Sweet soy sauce. Cook rice in water or chicken stock for about 25 minutes, until slightly underdone. Refresh under water and pat dry. Can be done in advance, along with the vegetable chopping. In large saucepan or wok, heat oil and saute onion until soft, always stirring. Add celery, garlic, ginger, sambal, curry and kecap manis; saute 2 minutes. Add green pepper and cabbage; saute 3 minutes more. Add shrimp and chicken, ham, pork or lamb and saute 2 minutes. Add rice and continue to saute until light brown. Adjust seasoning. Enright writes: "Serve with a light beer or ginger tea to quench the inevitable thirst fired by sambals. 4-5 Chicken Breast Strips

Nasi Goreng is just an exotic name for Fried Rice...so we hear! But it is amazing how the flavor is different for other Fried Rice. We love the fact that it can easily be made vegetarian or non-vegetarian. Traditionally, they do add Shrimp Paste to the dish but at my request Chef Sudabo showed me how it can so easily be transformed into a vegetarian dish. Thanks again Chef for allowing us into your kitchen!

Gordon Ramsay's Spicy Fried Rice Recipe from Indonesia
Gordon was in Indonesia earlier this year and while he was there learned how to make Nasi goreng. A staple of Take Out/Take Away, Gordon was able to a delicious Spicy Fried Rice to the next level. Simple, easy and quick, this is the ultimate Ramsay take on a fried rice!

Nasi Goreng Recipe:
Oil - 2 tbsp
Garlic (finely chopped) - 2 tbsp
Shrimp paste - 1 tbsp
Red Chilli Paste - 2 tsp
Shallots (roughly chopped) - ¼ cup
Prawns (small) - 100 g
Fish sauce (optional) - 1 tsp
Brown sugar - 1 tsp
Soy sauce - 1 tsp
Eggs - 2 nos.
Boiled rice - 3 cups
Spring onion - ½ cup
Sunny side up (for topping) - 1 no
Salt - 1 tsp
Black Pepper Powder - ½ tsp
Cooking Instructions:
1. Heat a wok, add oil, garlic, ginger and saute for a few seconds.
2. Add dried shrimp paste and saute for a minute.
3. Add shallots and saute on a high flame for a few seconds.
4. Add shrimp/prawns and saute for a minute.
5. Add red chilli paste and cook it for a few seconds.
6. Add fish sauce, brown sugar, soy sauce and mix till they all combine evenly.
7. Make a small gap in the middle of the mixture, add the eggs, let it cook and scramble it well.
8. Add boiled rice and toss it till all the ingredients combine evenly.
9. Check the taste and season it accordingly.
10. Add spring onions, give it a final toss and transfer it to a bowl.
11. Top it with a sunny side up, garnish with spring onions and serve it hot.
