4 T Peanut Butter 3 t Water (see directions) 2 t Sesame oil 1 ds Soy sauce 1/2 t Sugar 1 ds Tobasco, to taste 3 c Cooked Spaghetti noodles Cook spaghetti, drain and rinse with cold water (adjust how much spaghetti you make depending upon how hungry you are!) Mix peanut butter with a few teaspoons of warm water until creamy and light in color. Add sesame oil, dash soy sauce, dash Tobasco to taste. Pour over spaghetti. Serve with Nancy's Sesame Chicken.

Cold Chinese Chicken Noodle Salad
My famous Cold Chinese Chicken Noodle Salad. Ingredients are Chinkiang Vinegar (chinese dark vinegar), Maggi Sauce, Kadoya Brand Pure Sesame Oil, Lee Kum Kee Brand Chili Oil, and JIF Brand Peanut Butter (just add drinking water to a 1/3 jar of peanut butter, once it's a smooth consistency, it's done. Don't add too much water at first, you want it to loosen up the peanut butter and use a fork when stirring). Boil the dry Chinese noodles first for about 5-6 mins. (you can use spaghetti pasta if you can't find the noodles). Steam the chicken breast or dark meat for 20-25 mins., let cool, then shred it apart with your fingers. Dice up about 4 celery stalks and mix with bean sprouts. Last ingredient is the shredded carrots which you can buy already shredded. Good luck and enjoy!! You'll be amazed!!

Sichuan spicy cold noodles, a simple noodle dish for a light vegan lunch. I used cucumber in this recipe, however, you could use any other veggies of your choice, such as carrots, black fungus, bean sprouts and more. The amount of brown vinegar for this cold noodle dish is also up to you.
